This ramen shop is located in a narrow alley a little away from the bustling Nakasu Hondori street. Unlike many other dining establishments in Nakasu that only operate at night, this shop is open for lunch from the evening of the previous day until the next day afternoon. The first floor has counter seats, while the second floor has table seats. The specialty here is the salt ramen made with chicken broth, not tonkotsu ramen. They also offer soy sauce ramen, miso ramen, abura soba, and tsukemen. In addition, they serve curry rice, Hakata-style bite-sized gyoza, chicken wings, and grilled meat similar to a certain famous store. Even though they don't have tonkotsu ramen, they offer a variety of Fukuoka specialties and appetizers, making it suitable for both meals and izakaya-style dining. I tried the unusual "salt tsukemen" for 780 yen this time. I was surprised to see a brownish soup instead of the expected light and clear salt soup. However, the soup had a strong salt flavor, not soy sauce. It seemed to be a combination of chicken and seafood. Although it looked plain, the umami flavor was very rich. There was also a hint of chili pepper in the soup. The toppings included seared chashu and thinly sliced menma. The noodles were a bit brownish, possibly using whole wheat flour. They had a wheat aroma and a fairly firm texture, especially because they were thick. I had imagined an extremely light salt tsukemen, but it turned out to be a bold and wild version with noodles dipped in a salty sauce. The addition of grated tororo kombu in the soup was also interesting. This salt tsukemen, where you can enjoy the wheat-flavored noodles as the main focus, is not too heavy and has a good aftertaste, making it easy to eat even in the upcoming hot season. You can also enjoy soup wari by diluting the remaining soup. Although it's not a tonkotsu ramen shop, they will provide spicy pickled mustard greens upon request. They also have a variety of reasonably priced appetizers, which is quite rare for Nakasu. Overall, it was a satisfying meal.
