I had lunch in Maizuru on a business trip. Seafood dishes were quite expensive due to tourist prices, so I decided to exclude them. I was considering a set meal or a udon shop, but due to time constraints, I chose this place which is conveniently located near the station. I ordered the specialty dish called "Tonkotsu Ramen." They brought a whole plate of green onions (like the sumo wrestler ramen style?). Kimchi was served as a complimentary appetizer, and it was spicy and delicious. While enjoying the kimchi, the ramen arrived. It had thin but large slices of pork on top. I started by adding green onions on the pork slices. The soup was thick and flavorful. The noodles were thin and tasty. I visited on September 6th, and on September 8th, I saw on TV that Gal Sone was also eating at this restaurant. It was a surprise. Thank you for the meal.

First Asahi is a ramen shop located next to a popular family-owned ramen restaurant. I visited during a late lunch on a weekday and the restaurant was about 30% full. I was torn between ordering the regular tonkotsu ramen or the Chashu Men (1,500 yen), but ended up choosing the latter. Initially, I was served Kyuju negi (a type of green onion) and kimchi. While nibbling on the small pieces of kimchi, I waited for my ramen. When the Chashu Men arrived, the bowl was covered with slices of chashu that were so thin they tore easily. Despite the quantity, I'm not sure if the additional 600 yen was worth it. As I slurped the soup, a strong chicken aroma hit me. Wait, this isn't the rich pork-based broth I was expecting for tonkotsu ramen! I wonder what the "ton" in tonkotsu actually refers to? The chicken-based broth, cooked without any unpleasant odor, was delicious. It reminded me a bit of Tenkaippin but with a lighter touch. The noodles were thin and straight, perfectly absorbing the flavorful soup. If you want an extra serving of noodles, it's 100 yen for half a portion. The green onions are served separately, so you can add them according to your preference while eating. In the end, I ended up eating almost all the green onions served in a separate dish. During a trip to Kyoto and Maizuru, I visited this restaurant because it looked delicious. It was around lunchtime during the Obon season, so the restaurant was mostly full and bustling. I ordered the most popular tonkotsu ramen, and they brought out unlimited chopped green onions, which was appreciated as I can't eat them. The ramen was delicious, with an incredibly tasty soup. It didn't have the usual pork bone smell or unpleasant taste, it was rich without being too heavy, and it paired well with the thin noodles. The thinly sliced chashu was tender and soaked up the flavor of the soup, making it extremely delicious. I regretted not getting the chashu-men, but it would have been more expensive. I think it's a restaurant I would like to visit every time I travel to Maizuru.

I went to Maizuru for tonkotsu ramen. When I searched for a ramen shop, there weren't many options, so I decided to go to the most popular one. The interior of the restaurant was surprisingly ethnic. The signature "tonkotsu ramen" was surprisingly simple. The soup was thick like Tenkaippin's, but slightly milder. I was amazed by its simplicity at first sight. However, with the provided green onions and homemade kimchi, I could also enjoy changing the flavor.

During a business trip, I was recommended to visit by a local. The specialty here seems to be the "Tonkoku Ramen," which is simmered for over 6 hours using only chicken bones, attracting many regulars including locals. The appearance is similar to the renowned "Ajino Namon Sohonke (closing on the 20th of this month)," where you can customize the amount of green onions yourself. As recommended by the locals, the soup has a rich chicken flavor, and despite the ramen's name suggesting pork, it's surprising how much umami can come from just chicken. I couldn't help but order an extra serving (seen in the 6th photo). Since I made the journey, I decided to savor the local flavors as much as possible and tried the "Tamago Kake Gohan Set" featuring Nishikataji local eggs and homemade tsukudani kombu (seen in the 5th photo). The egg was rich and delicious. What's even more surprising is the free-flowing kimchi (seen in the 3rd and 4th photos). It's homemade and ranks quite high among all the kimchi I've had at ramen shops. It's definitely not your average quality for a free-flowing side dish. Thank you for the meal!

I decided on the classic chashu ramen for 1500 yen after looking at the menu. While waiting for my order, I went to the restroom. The restroom also had an Asian vibe, making it an interesting place. The chashu served was arranged like flower petals. I noticed there were green onions and kimchi on the table. I topped the noodles generously with green onions and savored them with the chashu and rich soup. It was an exquisite combination. I ate the kimchi by pouring it into the soup. A ramen shop chosen from a sense of strange mission to eat ramen for lunch as much as possible and limited time. Ramen Ichou-san. I had the "Tonkoku Ramen" for 900 yen. Although there were voices of chicken paitan in reviews on Google and Tabelog, isn't this more like tonkotsu ramen? It was incredibly rich and thick, almost sticky. According to their website, it seems to be a chicken paitan simmered for six hours. It was delicious. Green onions, kimchi, and spicy leeks were all-you-can-add. The highest-rated ramen shop in Maizuru. I had been wanting to visit for a while. If you're from Kobe, you'll understand, but it's just like Ramen Taro in terms of taste and kimchi! However, the toppings are simpler than at Ramen Taro, but you can add all the negi and kimchi you want. I love Ramen Taro, so I love this place too. Karaage Set 1300 yen 3.51.

I visited the restaurant around noon, during the lunch peak hours, and the parking lot was full. Just when I was about to give up, a parking space became available and I parked my car and entered the restaurant. I sat at the counter and ordered the "Tonkotsu Ramen" (800 yen). First, a bowl of sliced green onions was served, followed by the ramen. The bowl contained only chashu pork, and there was a system where you could add the green onions from the bowl to your liking. I decided to add about half of them. When I tried the soup, I thought it would be a tonkotsu ramen based on the name, but it turned out to be a rich chicken broth soup with a subtle soy sauce flavor and a hint of spiciness. The noodles were thin and chewy, blending well with the soup. I mixed them with plenty of green onions. The thinly sliced pork chashu had a light flavor, and when I added "nira shichimi" for extra flavor, it became spicier and more flavorful. Many customers around me were ordering set menus or extra noodle servings, indicating that this ramen shop is popular among locals.

I came to Maizuru for work after a long time, so I went to "Itcho" to eat ramen. I arrived around 1 pm. About 80% of the customers were inside the restaurant. I was seated at the counter as there was an available seat. I ordered the "Tonkotsu Ramen." Soon after, the Kujo green onions were brought to me. There was also Chinese cabbage kimchi and leek chili set up on the counter. They provided disposable chopsticks, a spoon, two small plates, a garbage bag, and paper napkins all neatly bundled together. The attentive service was impressive. While eating the Chinese cabbage kimchi, I waited for about 5 minutes, and then the ramen was served! I added all the Kujo green onions and was ready to eat! First, I took a sip of the soup. It was a rich soup based on chicken bones. It was incredibly delicious. Next, I slurped the noodles. They were medium-thin straight noodles, slightly firm by default. The thinly sliced chashu topping enhanced the flavor when combined with the soup. They said they use a Kyoto-branded Bijin Buta pork for the chashu. The noodles were so delicious that I wanted more, so I ordered an extra serving of noodles. The extra serving is for one portion. By the way, a half portion is also available. After waiting for about 2 minutes, it arrived! The portion seemed slightly larger compared to other places. I stopped by Ramen Itcho located along the national highway in Maizuru City on March 21, 2022. It has been over 20 years since my last visit. It's amazing to see this long-standing ramen shop turning into a well-established place. The old system remains unchanged, with the all-you-can-eat homemade kimchi and Kyogoku negi toppings (within reasonable limits) still available. While enjoying the kimchi, I waited for my ramen. I ordered the Tonkotsu Ramen, which came in a regular size. The soup, made with 100% chicken bones simmered for 6 hours, resembled the rich and flavorful soup of Tenka Ippin, without any unpleasant smell. The medium-thin straight noodles made with water from Fushimi, Kyoto, paired well with the rich soup, providing a satisfying texture. The toppings included beautifully marbled pork chashu from Kyoto, Kyogoku negi (self-service topping), moyashi, and other locally sourced ingredients from Kyoto. There was also garlic and chili pepper on the table for flavor customization. The Tonkotsu Ramen at Itcho, which I had after a long time, brought back nostalgic feelings and retained its deliciousness. It was a heartwarming bowl that warmed both my body and soul. The fourth ramen shop in Maizuru City is located in Nishi-Maizuru. You can take a bus to the Hirokoji bus stop and walk for about two to three minutes. The parking lot is full of cars. Inside the restaurant, about 80% of the seats are taken, but there are some available seats at the counter. I sat at the counter, looked at the menu, and ordered the special ramen. They served kimchi and green onions separately. The kimchi is delicious to eat before the ramen arrives. It's not very spicy, but the crunchy cabbage is tasty. There's a note saying to let them know if you need more. I wonder if it's unlimited refills, haha. After a while, the ramen arrived. It has a similar appearance to other ramen shops in Maizuru. The soup has a light chicken flavor at first, but it leaves a lingering umami taste compared to other places. They added a lot of leeks from the sieve, and I ended up putting them all in. Are they Kujo leeks? The crunchy texture and bitterness of the leeks are good. The toppings are thinly sliced chashu and bean sprouts. I wonder if bean sprouts are a default in Maizuru. The dish was topped with plenty of green onions, perfect for green onion lovers like me. The soup, as the name suggests, had a deep flavor with just the right amount of saltiness, quite delicious. The noodles were thin with a low water content, reminiscent of Kobe ramen. The thinly sliced pork and crispy green onions added a nice texture. The gyoza was average. Overall, it was a tasty meal.

While waiting, you can enjoy free kimchi, so I put it in a small dish before the ramen arrived. It comes with chashu and menma, and you can add as much green onions as you like from a separate strainer. Sprinkle some pepper and enjoy. The soup is great - just the right amount of richness and easy to eat. Then, add the croquette to the ramen. The croquette blends deliciously with the soup. Add some spicy sauce with leeks to change the flavor. It's also delicious.
