I heard that the renewed store of "Chinya," which closed in July 2019, opened in January and decided to visit. I visited "Chinya" last July, so it has been 8 months since my last visit. I made a reservation for 4:00 pm, thinking about the taste of the sukiyaki I had in July. When I contacted the restaurant, they said, "Today's reservations are full, how many people are in your party?" I replied, "Just one person," and they said, "If you come between 5:30 pm and 7:00 pm, it's possible," so I arrived at 5:30 pm. When I arrived at 5:30 pm, I was the only customer, and I received service as the only customer. It seemed quite empty at an early hour. The interior of the new store was very clean and beautiful. It seems that they have not fully utilized the third floor yet, so it's not that the reservations are full, but rather that the staff is not fully occupied. The previous main chef has retired, and the staff is generally younger, in their 30s to 40s. I ordered the premium course sukiyaki for 5,800 yen (previously 5,400 yen). In the past, they were flexible with orders, but it seems that it's not as easy in the new store. The complimentary dish of pickled Chinese cabbage was also on an order basis. When I ordered, the vegetables and meat arrived right away, but the amount of meat and vegetables seemed small. With some doubts about the taste, I had the young staff cook as usual. The ingredients - meat, vegetables, sugar, soy sauce, and eggs - were all the same as in the previous store. It seemed like they were working efficiently, but they didn't bother to pick up the vegetables that fell out of the pot and just put them back in. If it were the previous main chef, it would be forgivable, but why is that? I took a bite of the first cooked meat. The meat was delicious, but something was missing. The sugar seemed to be put in a lot, but maybe there wasn't enough soy sauce. Probably, there wasn't enough soy sauce compared to the sugar. In the past, I used to add soy sauce multiple times by feeling, so the taste was somewhat unsatisfactory compared to before. (I used to add soy sauce until the soy sauce dispenser was half empty) People who visited seeking the taste of the previous store may be disappointed because the ideal and reality are far apart. I know it's harsh to compare it to the previous store, but I hope they can make the most of the delicious ingredients. Will they strive to replicate the previous "Chinya," or will they try to compete with a different taste? I look forward to the future and want to give it another try.
