【After a long time, third stop on my business trip to Hakata】After visiting two food stalls, I started craving ramen, as expected! So I casually dropped by this place. I just love food stalls... (laughs). The atmosphere here was more relaxed than the other places, with a friendly couple running the place. The name "Nonkiya" suits it perfectly, doesn't it!? I had another glass of shochu (I lost count). And let's restart with beef tendons, shredded konjac, and bamboo shoot oden. The way they cut the konjac and bamboo shoot was nice. This kind of attention to detail is important. The broth was rich, with a hint of pork bone maybe? The oden was delicious. However, the ramen with a single sheet of nori as an accent had a very light pork bone flavor, with soy sauce dominating, so it was a bit different from what I expected as Hakata ramen... I started thinking maybe this isn't really Hakata ramen and headed back to my hotel.

After enjoying the bustling atmosphere in Nakasu, I casually wandered over to a food stall by myself. Nonkiya seems to be a well-established stall with many autographed posters displayed. I ordered ramen as a final dish and enjoyed it with a rock of shochu. The tonkotsu broth was quite light and might be a good choice for a finishing touch. However, the noodles were not quite to my liking. Thank you for the meal.

I received information that there is a <Nonkiya> in Fukuoka that has not been surveyed by JMUS, and I immediately went to investigate. The restaurant has the same name as Takasago and offers ramen in a similar style. My expectations were high. Located along Showa-dori in Tenjin, in front of a FamilyMart, the neon sign of the stall shines in green with white letters. On a Friday night, there were already 4 customers. Since I had been drinking, I ordered the finishing ramen. The ramen costs 500 yen including tax. The soup was thin, what you might call "tonkotsu hot water." It might be okay after drinking, but I would criticize it if I hadn't. The noodles were thin with low water content. I asked for them to be extra firm, and they had a good texture. There were plenty of noodles, and as a light eater who had already been drinking, I had to work hard to finish them. Toppings included 2 slices of chashu, seaweed, and green onions. There was no wood ear mushroom. The owner had pickled ginger ready, but I politely declined. I added sesame seeds. In terms of taste, I think Takasago is better. The close interaction with customers might make drinking more enjoyable. The hygiene of the stall is standard, and I would rate it much higher than Takasago in this aspect.

This is a long-established food stall with over 40 years of history, now run by the second generation. While there are many different genres of food stalls in Hakata offering Italian, French, tempura, yakitori, cocktails, etc., this particular stall specializes in simmered dishes with the menu decided based on the day's ingredients. In addition to the simmered dishes, their oden, yakitori, and ramen are also delicious. Located near the Hakataza theater, you can often see regular actors and famous personalities enjoying shochu along with other customers, which is quite heartwarming.
