There are many ramen shops in Kokura, and the quality is high. This shop seems to be a chain store. It's a tonkotsu ramen, but you can also taste the chicken. It was a bit light in flavor for me, but they provide ramen sauce so it's not a problem. There are garlic, sesame, and pickled ginger available, so you can enjoy changing the taste. The chashu slices are thin but there are quite a few of them. Put them on rice with pickled vegetables and dig in. Yeah, this is good. Thank you for the meal!

"Murata-tei" is actually a chain restaurant, but I really like it a lot. The ramen has a good animal smell that I enjoy. Especially the Himeji store is my favorite in many ways. However, when I visited the main store, the smell was a bit less compared to the Himeji and Ashihara stores. It was elegant, but lacked a bit of richness. I visited the store nearby to see how it was. There was a Chibi Maruko-chan stuffed toy at the entrance, which was strange (but Maruko, your underwear is showing...). The system is the same as other stores with a ticket machine. And instead of paper tickets, they use old-fashioned plastic tickets which adds a nostalgic touch. Handing over the ticket to the counter is the charm of "Murata-tei", but in this store, the manager-like person warmly welcomed me and took the ticket by hand. Hmm, this has a different charm (laughs). The ramen, with its thin noodles, was served quickly. I tried the soup, which had a mellow taste like the main store. It had less smell and lacked richness and tonkotsu intensity, but it was good in its own way without any strong flavors. However, the noodles had a smell that I couldn't quite get used to. I visited after the lunch rush, so I felt like the boiling water circulation wasn't working properly. If the soup had the rich flavor like the Himeji store, it could have masked the smell of the noodles, but unfortunately, the elegant taste was a mismatch. However, the spicy pickled mustard greens, which is a killer content of "Murata-tei", was still great at this store. By switching to the spicy pickled mustard greens ramen in the second half, I easily avoided the negativity. The chashu was decent in Kitakyushu, and I still love "Murata-tei".

Located in Moji, the closest to Kokura, this ramen shop is situated along the national highway with a spacious parking lot. They offer a simple menu of ramen, gyoza, extra noodles, and rice. Toppings are not included, but condiments like pickled vegetables, red pickled ginger, and sesame are available on the table. The ramen has a mild tonkotsu flavor without any unpleasant smell. The only downside is that the chashu slices are a bit thin, so thicker slices would be preferred. The noodles are very thin, and for a firmer texture, it is recommended to choose the hard option. Wondering which is the closest to Moji in Kokura Kita? Is it Pass, Tomiz Diner, Yakisoba House Men Gate? A ramen shop that expands its chain mainly in Kitakyushu. The Moji Dairi store is independently operated, unlike the main store. The menu consists of ramen, chashu ramen, gyoza, rice, and onigiri. Very simple. They also offer drinks such as beer and cola. As soon as you enter the store, there is a ticket machine. This time, I bought a ramen ticket (650 yen) and placed my order. The ramen. A simple ramen with a light but flavorful soup, thin noodles, green onions, and chashu. Personally, I prefer the soup at the independently operated Moji Dairi store over the main store. The main store doesn't give off much of a Nagahama ramen vibe, but the Moji Dairi store feels like THE Nagahama ramen. I stopped by on my way to Hakata by car. It was one of the stores that had caught my eye before. I arrived at the store around 13:00. There were three cars parked in the parking lot. The slope was steep and a little difficult to park. Inside the store, there was a very simple ticket machine. I purchased ramen and a large rice bowl and went inside. The interior of the store had table and counter seats. There was only one customer at the counter seat. I presented the food ticket and went to get water. I requested the noodles to be firm. It was brought to me in about 3 minutes. As expected of Nagahama ramen, the service was surprisingly fast. It had a very simple appearance. The ramen toppings were only chashu and green onions. I took a sip of the soup. It's truly the authentic tonkotsu soup from Kyushu. It's smooth and leans towards the lighter side compared to other tonkotsu ramen in Kyushu. Tonkotsu soup from Shikoku is even lighter. The noodles were straight and thin. Since I requested them to be firm, they had a good bite to them. They were delicious when mixed with the soup. The chashu was thin but tender, easily cut with chopsticks. It was quite delicious. I love tonkotsu soup, so I quickly finished my meal. Two to three families came in while I was eating. After finishing my meal, I left the store immediately to continue on to Hakata.

This place was originally a franchise restaurant in Moji Port and has since been relocated near my home. Even though it's close, I still drive there. The location is on Route 3, on the border between Moji and Kokura Kita districts, next to Temmyo Mountain. The parking lot can fit around 10 cars, although it's a bit sloped. Inside the restaurant, there is a double entrance with a ticket machine where you can purchase menu items like ramen for 600 yen, chashu ramen for 750 yen, extra noodles for 150 yen, onigiri, small rice for 150 yen, large rice for 200 yen, gyoza for 350 yen, and beer for 450 yen. Once you buy your ticket, you enter through another door to sit down. The restaurant is always kept clean and they even hire a cleaning service on their days off. It's a non-smoking establishment and they are also child-friendly, providing high chairs for kids. The staff are friendly and attentive, making it a pleasant dining experience. The ramen is served with a rich pork bone broth and the noodles have a nice chewy texture. The chashu topping is flavorful and the green onions add a nice touch. Overall, the ramen here is even better than the main branch. They also serve delicious gyoza.

In the Oosato area of Moji, there are quite a few delicious ramen shops recently. Muratei is a chain store, but it seems that the taste varies depending on the store. I ordered the ramen (550 yen). It operates on a system where you buy a food ticket, which seems to be a type that can be reused as it is made of plastic. The thin straight noodles and the pure pork bone soup with umami and a hint of bitterness are quite delicious. It's not just smooth, but also has a slight bitterness that seems to be a good match. When I sat down, I handed over the ticket and specified the firmness of the noodles. Now, let's see the true ability of a chain restaurant! The ramen was served promptly after a short wait. At first glance, it looked like a regular Nagahama ramen. The scent of pork bone broth wafted gently. The toppings were simple, with only chashu and green onions. There was also spicy pickled mustard greens on the table, so adding it would be an additional topping. This pickled mustard greens were finely chopped and surprisingly spicy. If you add too much, it will disrupt the flavor. The noodles were very fine straight noodles that intertwined well with the soup and flowed down to the throat. This is the essence of Nagahama ramen. The flavor was unexpectedly rich, and I felt it was a well-crafted and serious soup. The smell was suppressed, and I didn't feel much of it. Also, there were only two table seats, so every time a family came in, I felt pressured and wanted to leave quickly. The ramen was the same as when it was in Mojiko Port, a delicious Nagahama ramen like a Hakata street stall ramen that can be easily eaten even after drinking alcohol. This time, I put too much garlic in it, so my stomach started hurting three hours later. Be careful not to put too much garlic... The children were also happy and ate a lot. I wanted to get a kaedama (extra noodle refill), but since I was sitting at a table, I decided not to because I didn't want to take too long. I still feel that it's a bit tough for families with children. I think about whether there is a ramen shop where families with children can eat slowly.
