I went to see Kabuki at the Shochikuza theater and during the intermission of the daytime performance, I decided to grab a bite to eat at Takashimaya. I usually buy my intermission bento at "Yoshino Sushi," but this time I purchased from "Sushi Man."
- Chakin Sushi: 2 pieces for 1400 yen (excluding tax)
- Osaka Sushi: 1 serving for 1800 yen (excluding tax)
I forgot to take a picture of the Osaka Sushi, but it was a combination of boxed sushi and rolled sushi. The Chakin Sushi had a smooth thin omelet with gently flavored vinegared rice. It was a refined taste. Thank you for the meal.

Unlike the round cross-section of the mackerel sushi from Izua-san, which feels like art in the form of a rabbit, Sushi Man's pressed sushi has a neatly square box-shaped cross-section, with the mackerel skin resembling willow leaves, known as "Yanagi Sushi." After making the batter, it is wrapped in bamboo skin and tied with bamboo string, creating a chic package with functional beauty. I may be the only one who feels moe about this. I watched the artisan make it in front of me, and then enjoyed it the next day. Since it is wrapped in white board kelp after cutting, it is not cut, so you need to remove it from the sushi. This seems to be the traditional style of Sushi Man. The moist surface glistens with the skin of the mackerel, stimulating the appetite. When you eat it, the chewy texture and the umami of the white board kelp transfer to the mackerel, blending well with the sushi rice. The miso soup is made with bonito flakes, and served with sake, salt, tororo kelp, and a little bit of raw storage sake from Kikumasamune. It has a slight astringency and a crisp sweetness, with a gentle and restrained aroma reminiscent of a mealtime sake. The ginger that comes with it, along with a sip of ginger sweet vinegar and sansho pepper, is wonderfully spicy, showing thoughtfulness. The batter left for a day is also good. It was fascinating to see the work of a long-established restaurant. Enjoy not only Edomae nigiri but also pressed sushi and box sushi. There is joy in savoring history.

I went to Bunraku Senkiyaku for lunch near Takashimaya. After that, I have a lot of things to do (-.-;)y-~~~ It looks like I will arrive at my home in Kyoto around 8 o'clock. I can't cook dinner, so I decided to buy it on my way back. Since I'm not very hungry after eating, I opted for simple rolled sushi. I chose three types: conger eel, salmon, and cucumber. They may not be flashy, but they are very delicious in my opinion. After finishing various tasks, mostly cleaning, I arrived at my house in Kyoto and enjoyed pickled turnips and local sake from Kyoto while watching the first sunrise. I thought maybe I should have bought croquettes for dinner, but even though it was a light meal, the rolled sushi was very delicious and I'm glad I bought it!
