Arrived on September 24th (Sunday) at 10:50 am. Was the first customer, followed by one more person. Ordered the "special ramen" all in regular style. The soup is a rich and thick pork bone soy sauce flavor. It may seem a bit bland, but when you add garlic, red pepper, and ginger from the table, the taste becomes more lively and the umami doubles. The noodles are medium-thick curly noodles, cooked to normal firmness, but slightly firm. They have a stronger flavor than the soup and don't mix too much, but with 5 large pieces of seaweed, they taste quite delicious when rolled up and eaten. The chashu pork slices are large and there are 2 pieces. They have a firm texture and are very delicious. The soft-boiled egg is not heavily seasoned, but it adds different flavors and serves as a nice accent to the soup. In addition, there are spinach, green onions, and the large seaweed mentioned earlier with 5 pieces. It had been 1 year and 2 months since my last visit (I had to use a different account for my previous visit), and I have the impression that it has become even more delicious than before. It seems that the impression can change drastically depending on how you eat it, and it's nice that you can customize it to your liking. Thank you for the meal!

On Friday night, I ordered the special ramen for 1000 yen at Menya Wakame! You can choose the amount of oil, noodle firmness, and soup richness. I chose normal oil and soup, and firm noodles. It was like a traditional home-style ramen. I wanted to try the mini chashu bowl as well, but unfortunately, it was sold out. I hope to try it next time.

I started work at 6 am and finished around 10 am. Then I went out to Hoto via Kansai Airport Rapid. For lunch, I went to Menya Wakame. It is located about 150 meters from the west exit of the station, along the road parallel to the Sankai Line, just before the intersection with the old Kumano Kaido. It opened last July and is affiliated with Toriya Wakame in Sakai Higashi. This place is supervised by Kansai-style Raiken. When I arrived at the opening time of 11 am, the male owner asked me to wait a bit as they were still preparing. After about 4 minutes, he welcomed me in. I purchased a ramen regular size for 850 yen and added seaweed for 100 yen at the small ticket machine near the entrance. I sat at the third seat from the back of the counter. I handed over the ticket and requested firm noodles. I was the first customer, and there were no other customers yet. The kitchen was managed by the male owner and a female staff member. They brought me a glass of water. The pitcher was placed on the counter. When I tried to take off my suit jacket, the female staff member offered to hang it on the wall hanger. It was an unexpected gesture that made me feel grateful. There were no partitions between the seats at the counter. The space was average. The ginger was pickled. The container labeled "red pepper" seemed to contain doubanjiang. The white sesame was not too oily. They also had Kyuchan products. There were hooks for bags under the counter. I checked the kitchen next. They had two large stockpots. They used a titanium rod to scoop the soup. They warmed the bowl before serving. The ramen was served in about 14 minutes. Around 8 minutes in, the owner said, "Sorry, it will be ready soon." The soup was on the lighter side with a strong soy sauce flavor but not too assertive. The pork bone flavor was weak, almost non-existent. The chicken oil was also weak in flavor and quantity. The soup was served hot, almost scalding, while the noodles were firm. The noodles were medium-thick straight noodles, and their texture was average, lacking in chewiness. The chashu was pork shoulder, thinly sliced with a good amount of fat, and slightly rare. It was tasty and tender. The greens were komatsuna, fresh and crisp, with vibrant colors. The seaweed was thick and flavorful. The chopped green onions were thin and soft. They added flavor without spiciness. Overall, the experience was slightly disappointing, but the service was excellent.

This is a popular ramen shop run by a yakitori restaurant in the Sakai area, and it is produced by the famous tonkotsu ramen shop in Sakai, Furai-ken. I ordered the Chashu Ramen for 1,000 yen (tax included) with firm noodles only. The noodles are medium thickness and easy to slurp, with a good length. The large chashu slices are flavorful and delicious. The soup is a tonkotsu shoyu broth, where you can taste the rich tonkotsu flavor before the soy sauce. It reminds me a bit of the delicious tonkotsu broth from Furai-ken. The chashu slices are large and there are three pieces. They are not too fatty and very tasty. It has a rich and thick style of tonkotsu ramen, which I really enjoyed. I will definitely come back again. They also provide a service ticket for nearby parking, which is very convenient. Today, I decided to try this place instead of my favorite New York New York ramen shop. I ordered the special ramen (1000 yen). One of the good things about this place is that you can choose the amount of oil, the firmness of the noodles, and the intensity of the flavor. Of course, I asked for more oil and a stronger flavor. It's envy-inducing that students get a free extra serving. Two high school girls who came in later just ordered a regular extra serving. The flavor is nice and rich. I regret not adding rice to my order. As others have mentioned in their reviews, the "special" ramen here is a bit lacking. It only came with two thin slices of chashu, one egg, and five pieces of seaweed. I think I'd prefer to go to New York New York next door since it's cheaper and has more toppings. If they had priced this at 800 yen, it would have been really good.

I had a delicious bowl of ramen and chashu don at Wakame-san♪(´ε` ) The broth was rich, the noodles were firm, and the soup was not too salty. I also ordered a mini chashu don with extra mayonnaise on top. I asked for more flavoring than usual for the condiments. The shop seems to be working hard even during the year-end and New Year holidays, as they are open until around 3 am on New Year's Eve. Kanto people cannot eat this taste at all. It lacks the richness of oil and flavor. It's terrible. It's a shame because the izakaya side is delicious. Considering that it just opened, I hope it will become more delicious. It's near my house, so I want to try it again in three years.

Wakame-san visited a chicken ramen shop tonight and tried their new double soup tonkotsu and seafood ramen. Even though they ordered a half portion, it was still satisfying. For lunch on this day, I went to this restaurant. The restaurant is located on the back side of Ho Station, on the west side. I drove there and parked at a nearby coin parking lot. There is a ticket machine outside the restaurant, so I sanitized my hands and ordered the special ramen for 1000 yen and a small bowl of rice for 100 yen. I took the ticket inside and the staff had already prepared water for me. I handed over the ticket and requested my ramen to be rich and firm. It arrived in about 3 minutes and it was delicious.
