Located a 2-3 minute walk from Shinjuku Station West Exit, on the 2nd floor of a mixed-use building, "Original Grilled Hibachi" offers a space that feels like a time slip away from the hustle and bustle of Shinjuku. It is said to be a part of a successful series of restaurants. I made a reservation for a Saturday night and was greeted by a lovely hostess in a kimono upon opening the door. I was seated at the counter and the course I had requested during the reservation began. The course includes "Original Grilled" cooked in a large hearth, as well as authentic Japanese cuisine using seasonal ingredients.

Women love delicious things in small portions, right? I also love hors d'oeuvres! Starting with Rausu kelp broth, the careful work of the artisans can be seen in the varying tastes, sweetness, saltiness, and flavors. It was a delightful hors d'oeuvre.

The impactful seaweed-wrapped eel can be picked up and eaten as is! A unique dish with enjoyable combinations of ingredients, flavors, and textures. Switched to homemade lemon sour for drinks.

I was debating whether to order this from the menu, but it was included in the course! How delightful! Grilled squid innards cooked over a charcoal brazier can be eaten raw, but the best time is when the moisture of the squid is gone and the liver is concentrated! It was incredibly delicious! Makes you want some sake!

The premium yellowtail was grilled slowly over charcoal, resulting in a juicy and flavorful fish. Grilling over charcoal allows the heat to penetrate deep into the fibers, making the flesh plump. The crackling sound of the charcoal during grilling was pleasant. The thick cut and perfect seasoning were excellent. The grated daikon radish served with it was a great match.

For an additional 980 yen, changed to salmon roe and snow crab clay pot rice. When the chef opened the lid in front of us, the scent of snow crab wafted through the air. We mixed and shared it. It was filled with plenty of salmon roe and snow crab meat... Ah, so happy!

I didn't expect to have freshly whisked matcha for dessert, so my excitement went up! A smooth and delicious dessert. I was completely satisfied with the course at Hibachi until the end.
