"Ippudo" is a nationwide chain of tonkotsu ramen restaurants. The signature dishes are the "Akamaru" and "Shiromaru" ramen. "Ippudo KAY" is the first store to seal the signature "Akamaru" and "Shiromaru" ramen. The flavors available are miso, chukasoba, and tonkotsu. The "tonkotsu" is a combination of "Akamaru" and "Shiromaru" flavors. It opened on October 12, 2021. I visited on a weekday around 12 pm. The interior has a circular counter and tables for two and four people. It was almost full, but we managed to get a table after a short wait. I tried the "Chukasoba Charshu" that I was curious about. My companion ordered the "Miso Charshu" as usual. While waiting, we helped ourselves to "spicy bean sprouts, spicy mustard greens, and pickled ginger" near the register. We ordered extra "crushed garlic" for two. We had the usual "rooibos tea" for drinks. After waiting for about 16 minutes, our ramen arrived. **Chukasoba Charshu** Noodles: medium-thin straight noodles Soup: The soup was piping hot. It blends three types of soy sauce, and includes azuki beans, Hokkaido, and Kyushu elements, resulting in a delicious soup. Toppings: three types of charshu (2 slices each), seared, probably belly and thigh, maybe thigh roll, menma, kikurage, nori Price: 1120 yen (tax included) **Miso Charshu** Noodles: medium-thick straight noodles Soup: The soup was piping hot. It blends six types of miso for a mild flavor with just the right amount of saltiness. Toppings: three types of charshu (2 slices each), seared, probably belly and thigh, maybe thigh roll, menma, shimeji, carrot, bean sprouts, cabbage Price: 1150 yen (tax included) The "Miso Charshu" was a satisfying miso ramen. The three types of charshu complemented the soup well. The "Chukasoba Charshu" also had a good soy sauce-based soup. The three types of charshu were flavorful and matched the soup. Both had a mild soup, but you could enjoy flavor variations with the "crushed garlic, spicy bean sprouts, spicy mustard greens, and pickled ginger." The ability to customize the flavors is a unique feature of these miso and chukasoba ramen. Next time, I might try the "tonkotsu charshu." It was delicious. Thank you for the meal.
