Hokkaburi sushi is a specialty ekiben (train station bento) from Kushiro Station. In 1987, the current owner's father in Kushiro was thinking of creating a specialty product using local ingredients, and that's how this menu was born, based on a recipe from the owner's mother. The name "hokkaburi" comes from the appearance of daikon radish placed on top of the marinated fish, resembling the white cloth "hokkaburi." The original iwashi hokkaburi sushi, which is the basis of hokkaburi sushi, was introduced on TBS's program "Matsuko no Shiranai Sekai" as one of the delicious ekiben nationwide by a railway cameraman who ate 5000 ekiben. It is the same as "Iwashi Hokkaburi Sushi." The sardine used in the sushi is marinated in rice vinegar with onions and ginger for a day to remove the fishy smell unique to sardines. The daikon radish is thinly sliced, almost transparent enough to see the black spots of the sardine, creating an artistic presentation. The crispy texture of the daikon radish is still enjoyable. The sardine has a fruity taste that gives a hint of Western influence. The vinegared rice has a strong vinegar flavor. While the traditional iwashi hokkaburi sushi made with sardines from Kushiro Port is delicious, the sardine hokkaburi sushi with its unique presentation is also tasty. Priced at 1290 yen for 8 pieces, it may not be cheap, but it's worth trying for its fruity flavor and interesting textures of daikon radish.
