The fatty tuna is served in foamy soy sauce, allowing the rich flavor of the tuna to blend perfectly with the soy sauce. The Hokkaido sea urchin is fried in seawater and then served as is, with its sweetness spreading in your mouth. The blowfish is recommended to be eaten with ponzu sauce, but the chef suggests trying it with dehydrated blowfish milt for a unique taste. Despite being a sushi restaurant, they surprised us with Saga beef sukiyaki. We also ordered a variety of rare seafood dishes that are not always available, such as the snow crab which had a luxurious texture and elegant sweetness.
