On March 31, 2023, I visited a shop in the middle of Nakatsu, Fukushima, and Umeda, located on the west side of the Sky Building in Oyodo-naka, where honey sweets made from urban beekeeping honey are sold. They offer a variety of treats such as financiers, rusks, canelés, kinpaitō (crunchy sugar candy), honey nuts, and raw honey, but the standout item is the "Premium Honey Castella" that I purchased on this occasion. This castella is made using honey collected by urban beekeepers who work on the rooftops of buildings in Osaka, and crafted by a traditional Osaka castella artisan using a challenging method called "5:3 baking." The ratio of egg yolk to egg white is 5:3, with a higher amount of egg yolk used to create a rich and flavorful castella. The color is more yellow, the texture is moist, and it falls into the high-end category of castella. Unlike other shops that use sugar or caramel for sweetness, this shop uses a generous amount of honey, resulting in an elegant sweetness. However, please note that it contains eggs and wheat, so those with allergies should avoid it, as well as children under 1 year old due to the honey content. The castella is vacuum-packed in eight slices, priced at 2700 yen in a paper box and 3000 yen in a wooden box. Although it may seem expensive compared to regular castella, the shop also sells "Premium Honey Castella" nearing its expiration date at less than 1/3 of the price. These discounted items have a limited quantity and tend to sell out quickly after the shop opens around 11 am. The rich and moist texture of this castella will make you rediscover the deliciousness of castella. It's not a fluffy castella, but a chewy one.
