I wanted to do some food hopping in Fukuoka, so I did some research and quickly came across this local specialty. I decided to go to Itoshima to try it out. It was a bit of a hassle to get there, with a combination of train and bus rides, but I was determined to taste the delicious oysters. I searched for oyster huts on the train and chose this place. This oyster hut does not provide ponchos, so it's recommended to bring something to protect your clothes from getting dirty, as the oysters can splatter while they are being grilled. Also, be prepared for hot broth splashing from the neighboring tables. As a precaution against infection, once you are seated, the first thing to do is add the restaurant on LINE as a friend. You can place your order through LINE. I was indecisive at first, so I ordered the "recommended variety set" first. Then I added on the "oyster fry trio" and "dried kamasu". Most oyster huts serve oysters in 1kg portions, but this set here includes 500g of oysters, which is enough for one person with a total of 8 oysters. It also comes with "oyster rice", "abalone", "red shrimp", "scallop", "turban shell", "large clam", "sausage", and "oyster soup". Personally, I prefer oysters to be more plump with a good bounce and chewiness, and a hint of sea flavor. Many regulars bring their own lemon juice to add, but I think it's better to taste the oysters directly without any additional condiments. The highlight for me from this menu was the "dried kamasu", with its firm and sweet flesh, along with a perfect balance of sweetness, saltiness, and flavor. I would recommend trying it, but for me, one visit was enough.
