Revisit: January 2011, how many times has it been? No, how many years have I been going? I feel like it's over 20 times. Fukuoka really has a lot of great restaurants, but Carbi Tei never disappoints me. Looking back, in the past year or two, I have eaten yakiniku many times in Tokyo. Of course, I went to restaurants with a rating of 3.5 or higher on Tabelog or recommended by friends. It is common for the meat to be tender, but it is rare to find beef with a natural sweetness that is not masked by the sauce. Nowadays, with many yakiniku restaurants claiming to serve A5 grade meat, the meat seems to have become too fatty in the quest for tenderness and sweetness. One needs a strong stomach to digest that fat, meaning most people can only eat a small amount of delicious meat. This time, at Carbi Tei, I made a new discovery. The fat is not overwhelming. There is no lingering feeling of fat in the throat. In my opinion, the quality of fat at Carbi Tei is exceptional. You can leave the restaurant after eating delicious meat without feeling unwell. The appearance of the meat is not much different from that of other more upscale yakiniku restaurants, but what is the difference? Could it be the result of the manager's discerning eye over the years? Thinking about such things, I return to Tokyo. If anyone reading this knows of such a long-established restaurant (preferably in the Tokyo area), could you please share it with me? Last time, I was surprised to see that there were quite a few new posts about Carbi Tei. And it seems they were interviewed by the cafe section god, Yoko Kawaguchi from All About. I read the article, and a professional's perspective is truly wonderful (I was a little moved by the writing). I secretly took some photos when I visited the other day, so I'll upload them now. Delicious, still delicious. The sauce, the meat (recently it's branded beef with a lovely cow's nose stamp). It seems there are only coupons on Tabelog. Carbi Tei, in its 30th year, is taking on the recession head-on, it's really not just any restaurant. The famous restaurants in Hakata are still going strong.
