ONO HAKATA-Octo Natura Kyusyu- @ Fukuoka City ~ I visited the new restaurant of member Ono-san, "ONO HAKATA," which opened at "The Royal Park Canvas Fukuoka Nakasu." The atmosphere is different from Ono-san's previous restaurants, with a lot of exotic charm, like being in an Asian resort. I reserved a prefixed style course with appetizers and mains, all cooked over a wood fire. Today, I sat at the counter and was greeted by Maeda-san. It feels like he appears before me wherever I go. In front of me, there was a wood fire burning. It's not as intense as "Restaurant Hagi," but it's still quite impressive. We started with an appetizer assortment featuring local specialties from Kyushu. Each item was placed on the map of Kyushu. The meal included various dishes like grilled golden conger eel bones from Tsushima, Italian prosciutto with Toyomitsuhime figs from Fukuoka, Yufuin salmon and yuba from Oita, tomato tart, olive red pork rillettes sandwich, and marinated Japanese jack mackerel from Kagoshima. I enjoyed it with ginger ale. I also had Hokkaido scallops and Itoshima vegetables grilled over wood fire with aged balsamic sauce. The vegetables included zucchini, yellow zucchini, new burdock, sweet long red peppers, and red bell peppers. I had bread with grass-fed butter and pumpkin soup. Then, I tried the Arita peach meat confit, cooked at 63 degrees after being infused with wood aroma. For dessert, there was a selection of panna cotta with mango and passion fruit sauce, chocolate cake, astringent chestnut ice cream, and various fruits. It was a well-balanced restaurant experience. I saw many birthday plates being prepared in front of me.
