This is a shop in Kitami City. Although the main store is located in Kitami, this seems to be a second branch. Triton has outlets in Ikebukuro Tobu and Skytree, and is always popular with long queues. I sometimes go to see how Triton in Tobu is doing, but I always give up because there is always a line. This time, since I came all the way to Kitami, I decided to wait in line and eat. The shop is about a 10-minute drive from my parents' house. The store opens at 11:00, so I planned to leave with plenty of time, but I arrived a little after 11:05. The parking lot in front of the shop was already full. I let my wife go ahead and squeezed in and parked at the very end. It took a little time because the road was icy. Inside the shop, there is a counter in the center, and table seats are available in the back and left side. The first customers have already filled the seats. There are waiting seats by the window, and my wife was sitting there. Since there are two of us, I thought we wouldn't have to wait too long if we could sit at the counter. Even so, it took 35 minutes before we could sit at the counter. (laughs) Now, let's eat! There was the usual greeting from the staff at Triton, and we started. Since we came all the way to Hokkaido, let's have some local ingredients. We had saury, scallop, squid (with mountain wasabi), fatty salmon, medium fatty tuna, cucumber roll (with mountain wasabi), sea urchin, and more. I forgot to take pictures because it became too much of a hassle. People in Kitami also use regular wasabi, but they really like mountain wasabi. I love it too. This shop serves fresh and large-sized ingredients. This might be a matter of personal preference. My brother goes to other conveyor belt sushi restaurants because he thinks the balance between the rice and fish is off. I think this size is just right, but... If the ingredients are not good, you need to add some skill and effort to make it taste good, but if the ingredients are good, it's better to just serve it without any unnecessary adjustments.
