I went to Hamazushi to eat Otoro and Miso Katsu. It is located in Chiyoda, Hakata-ku, close to Marine Messe, Fukuoka Boat Racecourse, and Nagahama Market. This area faces Hakata Bay, also known as the waterfront district. In case Hamazushi didn't suit my taste, I also listed Genkai Maru Tenjin-ten, Mawaru Sushi Ichiba Nagahama-ten, and Sushi Gyotatsu as backup options. As expected, Hamazushi was just okay. It might be unfair to nitpick a 100-yen sushi plate. It was much tastier than Kura Sushi, Kappa Sushi, Kyushu Sushi Monogatari, Kaito, Sushi Daijin, and Sushi Meijin, but still not comparable to Sushiro. To make up for the disappointment at Hamazushi, I tried the Anago and Sea Grapes at Genkai Maru Tenjin-ten, along with Iberico Pork Toro. Anago was not available, but the Sea Grapes were amazing with their popping texture. I usually don't eat squid, octopus, or shrimp sushi as they seem cheap, but the raw shrimp and squid at Genkai Maru were exceptional. The raw shrimp, especially when paired with Hakata Special Grade soy sauce, was sweet and delicious. The reason I fell in love with Genkai Maru was their Hakata Special Grade soy sauce. Yesterday was Sushiro, today was Hamazushi. After having cheap soy sauce for a while, the depth and grandeur of Hakata Special Grade soy sauce really hit me. However, the sushi rice served in front of me was not great. It was too hard, almost like eating rocks crumbling in my mouth. The sweetness was too strong and it was warm. The temperature of sushi rice is crucial. Rolls and seared dishes are brought from the kitchen. The sushi rice brought from the kitchen was the usual taste of Genkai Maru. I finished with Seared Mayo Salmon and Iberico Pork Toro. The Seared Mayo Salmon can taste different depending on who makes it. Today's Seared Mayo Salmon lacked the smoky flavor but had a unique sweet and sour taste that was exquisite. However, it had less mayonnaise compared to other branches. The Iberico Pork had a strong meaty flavor and a crunchy texture, making it incredibly delicious. Despite having the same 8 plates as Hamazushi, the quality was just on a different level.
