I visited this restaurant located near the izakaya I used for lunch the previous day. I purchased a ticket for the second most popular "Negi Ramen" at the ticket machine. I handed the ticket to a man who appeared to be the owner of the store. The shop was run by a single owner. The water served was self-service with cups and a pot of cold water. The condiments included gyoza vinegar soy sauce, vinegar, ramen pepper, chili oil, and white sesame. The background music in the store was J-POP. The food was served in about 5 minutes after handing in the ticket. The noodles were thin, curly, and white. They were cooked just right, with a good chewy texture and light mochi mochi feeling. The toppings included 2 slices of chashu, 2 types of green onions, Chinese cabbage, carrots, pork, and minced garlic. The chashu was thinly sliced pork shoulder chashu with a soy sauce-based seasoning. It was tender but slightly oxidized, which was a bit disappointing. The two types of green onions, finely chopped green onions and white leeks, were mixed lightly. The fresh taste and crisp texture were enjoyable. The portion was generous. The Chinese cabbage, carrots, and pork were simmered in the soup. The Chinese cabbage was soft and had a sweet taste from being simmered. The carrots were cut into very thin slices and had a subtle presence. The pork was small cuts of pork belly, juicy and delicious. The minced garlic was finely chopped and sunk to the bottom of the bowl (quite a generous amount). The soup had a soy sauce flavor, made from a base of pork bones, chicken bones, and aromatic vegetables. It was a clear broth with a good umami taste, easy to drink with a refreshing finish. There was no sharp saltiness from the soy sauce, intentionally creating a slightly sweet flavor. The garlic flavor was light at the beginning but became stronger in the middle, adding a punch to the taste. I enjoyed the changing flavors while finishing the noodles and toppings. I left about half of the soup, raised the bowl and cup on the stand, and left the store. As I left, I was greeted with "ookini!" which made me feel the experience of being in Osaka. Overall, the noodles were satisfactory. The chashu had a slight oxidation issue... The technique of simmering pork belly and Chinese cabbage in the soup reminded me of Tenri Ramen??? The soup was sweet at first but the garlic did a great job... The service was very polite and the store had a clean and comfortable atmosphere. Thank you for the meal!!
