I had lunch at a ramen restaurant famous for its "call back" method of blending soup in a large feather pot. It is located near the bus stop in front of Tenjin Post Office. You purchase a meal ticket at the ticket machine right at the entrance. The interior of the restaurant, with a mural of boar, deer, and butterfly, has a modern Japanese atmosphere, with table seating on the right side and counter seating on the left side, next to the kitchen.

The appearance is a bit dark, not quite like soy sauce pork bone broth. It contains pig knuckles, spine, and belly fat. It was introduced as having a strong and rich flavor, and indeed, when you taste it, it has a solid richness. However, the aftertaste is more about umami rather than heaviness, so it was delicious until the end without feeling too heavy on the stomach. The noodles are thin and cooked just right. The chashu pork is tender and you can taste the meat's umami. The flavored egg only soaks the surface rather than all the way through, and the yolk is not too runny, so it doesn't melt into the soup, which I liked. There are a lot of wood ear mushrooms, and the seaweed is a nice touch.
The service is at a restaurant where energetic calls echo through the air. I usually don't like places like that, where the energy is overwhelming and you're rushed through the meal. However, this restaurant was different. Despite the energetic calls, the service to each individual was polite and proper, which was nice. There are also female staff members, making it a comfortable place for women to dine alone. The impression was that there were more locals than tourists, but after lunchtime, customers started coming in one after another, so it's best to visit in the morning if possible. I also want to try the Tianjin rice, which seems to be a specialty.
