On this day, after visiting Osaka Tenmangu Shrine, I arrived around 9:45. There was one customer ahead of me. The shop opened around 10:40, and there were 11 people in line ahead of me. I tried the miso and shoyu ramen, so the only option left was the shio (salt) ramen. I sat at the counter and watched the skilled work of the chef. There was a familiar rhythm, with no wasted movements, just calmly preparing the dishes. He always checked the taste of the soup and the firmness of the noodles multiple times. There seemed to be no compromise in quality. Each bowl of ramen was made with love, maintaining a consistently high level of quality. Finally, my turn came and I got the shio ramen. I believe that the true essence of ramen soup lies in "salt". The chashu, green onions, and seasoned egg all harmonized perfectly, not just blending in but enveloping each other. They seemed to bring out the best in each other. I savored the joy of eating this bowl of ramen. I left the shop around 11:05, with 32 people waiting in line. Perhaps it was because it was a Friday, but the line was particularly long.

Arrived at 10:50. Already waited in line for 50 minutes before being able to enter. There were rules such as refraining from talking and avoiding strong scents like perfume. The restaurant only had a counter with 7 seats. After much consideration, I decided to go with the signature dish, the miso ramen. The soup was thick and rich, but not overwhelming. I regret not ordering the white rice, it would have been a perfect match with the soup. The chashu was flavorful, juicy, and packed with meaty goodness. The crunchy bean sprouts added a nice touch without being intrusive. The medium-thick noodles were delicious and soaked up the soup well.

I have been to this place many times. The miso ramen, which used to cost just under 1000 yen, has now increased to 1400 yen due to inflation. However, the line of customers never seems to end, and the chashu has definitely become more substantial over time. I appreciate that the owner is not just raising prices without reason. They are strict about things like perfume and manners, and there was a period when their Twitter account was private, making it hard to see their updates. My only concern now is the price increase in their menu starting from September. My personal recommendation is the "miso ramen" with a side of "small (or medium) rice." Just for your reference.

Ordered the popular miso ramen, which is a representative dish of Osaka and even listed in the Michelin Guide. The soup is complex and spicy, with a different taste from the hearty miso ramen, containing ingredients like sansho pepper. The chashu is tender and has just the right amount of fat, very delicious. I slightly regret not adding the chashu topping for 900 yen, it would have been worth it. The noodles are medium thickness and straight, easy to eat. I recommend starting with simple toppings and then adding white negi later for a different texture and flavor experience. Visited during lunch on a weekday and waited in line for about 45 minutes. While waiting in line, you are given the menu to decide on your order before entering the restaurant.

I visited Ramen Souten after a long time. This time, I arrived after 10 o'clock and there were three people ahead of me, so I was fourth in line. They provided chairs outside, which was nice. The shop opened earlier than the usual time of 11 o'clock, around 10:40. I ordered the back soy sauce ramen with a side of small rice. After a 15-minute wait in the somewhat tense atmosphere inside the shop, my order arrived. The back soy sauce ramen was surprisingly light and easy to eat, with a mild soy sauce base. The noodles were straight and thin, with a good texture that paired well with the soup. The chashu was made from Kagoshima black pork, easy to chew with a strong sweetness from the fat. The seasoned bamboo shoots were also flavorful, making a great accompaniment to the rice. Overall, it was a ramen that even women could enjoy, despite being made only from animal ingredients. Honestly, I felt a bit disappointed as I think miso ramen would have been much better for ramen rice.

Here comes the bowl. Let's start with the soup. The soy sauce flavor hits you first, followed by chicken, and then seafood. It's really tasty. The noodles are well-balanced medium-thin straight noodles. Toppings include chashu, bamboo shoots, and chopped green onions. The chashu is thick and flavorful. Miso ramen for 1200 yen, extra chashu for 800 yen. Arrived at 10:00 am on a weekday and was third in line. By around 10:20 am, the first round of seats was filled. Around 10:45 am, the restaurant opened. This was the best miso ramen I've ever had. (There are not many places that serve miso ramen to begin with). Miso ramen can often get boring because it tastes the same, but the miso ramen here is so delicious that I could eat it all the time.

It had been a while since I last visited Souto-san, so I came to slurp some noodles! I arrived about 50 minutes before the 11 am opening time, but there were already 5 people waiting. I was guided into the restaurant about 20 minutes before opening, so I was lucky. The miso ramen is popular and delicious, but I always go for the back soy sauce ramen! It comes with green onions, a hint of yuzu, thinly sliced menma, and two slices of pork chashu, making for a simple yet beautiful presentation. The clear soup, made from chicken and other animal bones, has a rich umami flavor with a sharp soy sauce kick. So tasty! The homemade thin straight noodles have a smooth and slightly chewy texture, making for a satisfying slurp. The chashu is tender and full of the delicious flavor of quality meat! It was so delicious that I finished it in no time. A refined and delicious bowl, thank you for the meal!

This is Ramen Souten. It's a popular restaurant in Minami-Morimachi, and when I arrived at 10:15 am, there was already a line of over 10 people. The line kept growing, with over 30 people waiting by the time they opened. I had to wait for about 40 minutes under the hot sun before finally getting inside. I ordered the miso ramen with a side of small rice. The miso soup, made in a wok, had a rich flavor with a hint of sweetness and umami, complemented by the lard on the surface. The homemade medium-thick noodles were delicious, perfectly coated in the flavorful miso soup. The white leeks and yuzu peel added a nice aroma. The crunchy menma and bean sprouts were tasty too. The Kagoshima black pork chashu, both sliced and diced, had a great texture and taste. The two slices of black pork chashu were meaty and delicious. I enjoyed the diced chashu as a side dish with rice. Lastly, I poured the leftover rice into the miso soup for a satisfying end. Each bowl was carefully made and delicious.

It's hot, but I had lunch here. It's a popular place, so when I arrived at 10:48, there were 7 people waiting in front of me. Due to the strong sunlight in this season (early August), they had placed parasols outside the store. I was able to enter at 11:20. I asked for the location of the restroom and washed my hands with soap. The restroom is located at the back of the store, at the end and to the left. The menu is soy sauce ramen. It seems to be made with chicken broth, and the soy sauce flavor is solid. The noodles are medium-thick straight noodles, with a good texture. It was delicious. I finished all the soup too.

It is refreshing yet rich, with a perfect amount of saltiness. The yuzu adds a nice touch to enhance the refreshing feeling. The slightly sweet chashu is overflowing with the umami of pork and the sweetness of high-quality fat. It is thick and tender, with a satisfying texture. I am "Noronori," who mainly walks around eating lunch in Sakai. I visited the popular restaurant Ramen Hayato in Minamimori-cho. Oh, as expected, there was a line ((+_+)). There were 12 people waiting, so I guessed I might have to wait for about an hour based on reviews. But since I came all the way here, I decided to wait in line! Surprisingly, I was able to be seated in about 30 minutes. While waiting in line, I had already ordered the miso ramen. I noticed that even though it was mentioned that the restaurant can only accommodate 6 people when there is only one staff member, on the day of my visit, there was a staff lady. It seems that having this staff lady taking orders in advance helps things run smoothly. Even if there are the same number of people waiting, the difference between waiting 30 minutes and 1 hour might be due to this. Watching the process of making the ramen was fun! The owner seems to have a very precise personality. Every time, following the same procedure with the same movements, diligently working... doing the same thing day in and day out. I arrived at 11:10, just after the 11:00 opening, and there was already a line of 15 people! In the summer, I would have been completely discouraged, but the cool weather made it bearable. After waiting for 40 minutes, I finally got in. I ordered the miso ramen with rice on the side. The bowl arrived in about 5 minutes! The rich-looking soup, with two types of chashu, green onions, and yuzu neatly arranged. With the first sip of the soup, a rich, deep, and mellow flavor spread in my mouth. It was delicious. The homemade medium-thick noodles had a good texture. I quickly devoured the bowl. It was great to enjoy it in various ways, like sandwiching chashu with rice or mixing rice with the soup. Many people around me were finishing their soup completely. It was quite a satisfying bowl. - Atmosphere: There was a notice stating that those wearing strong scents like perfume or cologne are prohibited. It seems that it could interfere with the employees' work, so they must be quite sensitive. I lined up from 11:10 on a weekday and was able to eat by 12:00.

Exciting. 10:40 Arrived 20 minutes before opening time. Entered. Seated. Ordered. 10:53 Ramen served. 11:01 Paid. Left. Back Shoyu Ramen for 1100 yen. I had decided on my last visit that I would order the Back Shoyu Ramen next time, and I stuck to my plan. The soup, which is made only with animal ingredients and no seafood, has a delicious chicken umami flavor. The thin noodles match the soup perfectly and are delightful to slurp. I visited during lunchtime on a regular day. I arrived 40 minutes before the opening time and was 7th in line. Luckily, I was able to secure a spot for the first round. Today, the restaurant opened about 20 minutes earlier than scheduled and there were over 20 people waiting in line. The shop is run by the owner who used to work at "KADOYA Shokudo" and it is a very popular place, being selected for the Michelin Bib Gourmand award. The interior has only 7 counter seats with no partitions between them, and the spacing is normal. Although there are signs saying "No perfume" and other precautions. This time, I ordered the "Shio Ramen for 1000 yen". It arrived after about a 20-minute wait. The beautiful amber-colored soup was impressive. The rich flavor of Hinai-jidori chicken was predominant in the soup, with a gentle touch of seafood. Initially, the richness of the chicken oil stood out, but over time, the seafood flavors became clearer. The soup was meticulously made and beautiful down to the smallest details. The straight thin noodles were cooked soft, silky, and had a pleasant texture. They paired perfectly with the chicken clear soup, creating a harmonious combination. The toppings were simple - pork belly, pork belly roll, menma, and green onions. Both types of pork were of high quality, especially the pork belly roll which brought out the sweetness of the fat. Additionally, the seasoning of the menma was very much to my liking. It was a bowl of ramen that exuded meticulousness and beauty. Since the miso ramen is popular here, I would like to revisit. The chashu came in thinly sliced and cubed varieties. I placed the cubed chashu on the rice to make a chashu bowl. The bean sprouts and green onions added a nice touch, making the meal enjoyable until the end. I can see why there is always a line. Next time, I would like to try the soy sauce ramen. I had some errands nearby, so I decided to visit this shop that I had been curious about for a while. There is no parking lot, but there are plenty of coin parking lots nearby. I arrived about 30 minutes after they opened and there was already a line. Just before noon, they put up a sign saying they had sold out for the day. The menu had a lot of notes on several pages. There were instructions like no perfumes or fabric softener scents allowed, and many other notes. I was a bit nervous while waiting in line for about 30 minutes, thinking the owner might be strict. When I was finally seated, the ramen arrived quickly. I ordered the salt ramen, as I prefer salt over miso ramen. It was a rich and salty ramen with thin noodles and a hint of yuzu flavor. It was quite strong, so I think men would like it. The owner thanked me when I finished, which was a relief. The chashu was especially delicious. However, everyone around me was having miso ramen, so maybe I should have tried the miso ramen instead.笑笑.
