I went to a ramen shop called "Chuka Soba Mugen." There were a few people waiting, so I wrote my name on the waiting board and waited. While waiting, I decided to order the dried fish ramen after looking it up on my phone. When my name was called, I stood in front of the vending machine where I could choose from various ramen options. I chose the dried fish ramen, which was served in a clear broth with a hint of chicken oil. The noodles and broth were delicious, and the large slices of chashu pork added to the experience. I asked for some black pepper, and a stylish electric mill was brought to my table. The freshly ground black pepper enhanced the flavor of the dried fish broth. Overall, it was a great dining experience at Chuka Soba Mugen.

After several months, I visited the restaurant again. This time I arrived just before 2:30 PM, so I barely made it before they ran out of soup. I ordered the special soy sauce ramen and chashu rice bowl. The quality of the ramen was as high as ever, living up to its reputation. However, the rice in the bowl was a bit hard, which was a bit disappointing considering the standard of this level of restaurant. Next time, I will just stick to ordering ramen.

I arrived before 1:00 PM on Saturday and waited for about 20 minutes as the 4th group in line. The restaurant has 8 seats, but the turnover is good. There were a few solo customers as well. This was my first time, so I tried the famous Chinese ramen, chashu rice bowl, and flavored egg oil ramen. The soup was well-balanced, the noodles had a great texture, and the chashu, despite being thin, had a delicious flavor. I will definitely go again!

I understood the importance of their commitment, but this particular restaurant was the first to suggest separating the soup into a separate dish before anything else. When the ramen arrived, I followed their instructions and poured the soup into the separate dish. The soup was delicious, just as they had promised. The noodles were also to my liking, straight and chewy. I had no complaints. After finishing the noodles, I tried the soup in the separate dish and truly felt the difference in taste. It may seem simple, but it is an important detail. It sparked my curiosity about what other flavors their different ramen dishes might offer. I will definitely be back soon!

I arrived around 1 pm and there was a wait of 2 people ahead of me. After waiting for about 10 minutes, I was able to enter the restaurant. I purchased tickets for the Special Chinese Ramen and Chashu Rice Bowl. The Chinese Ramen had straight noodles with a smooth texture. The thinly sliced chashu had a light seasoning, but paired well with the ramen soup and was incredibly delicious. The chashu in the ramen was much tastier than when eaten with the rice bowl. On September 11, 2023, I visited "Chukasoba Mugen," a place where I usually hesitate to have lunch due to the long lines. However, since I went a bit early for lunch this time, I was able to enter smoothly without any queue. Normally, you have to write your name and the number of people on a waiting board in front of the store and wait until you are called, but on this day, a staff member opened the door and led me inside right away. I chose the "Ajitama Chukasoba" (1200 yen) and the limited edition "Ginshari Rice Ball" (200 yen) by purchasing food tickets, and then sat at the counter. This restaurant has been featured in the Michelin Bib Gourmand guide for 5 consecutive years and is known among ramen enthusiasts, but it was my first visit. The style here is to first transfer 2-3 cups of soup to a small dish, and after finishing the meal, to savor the soup. The natural mineral water in the noodles dissolves into the soup, causing the soup in the ramen bowl to become blurred after finishing the meal. This style is meant to allow you to purely enjoy the rich soup made from top-grade whole chicken. The pork chashu and menma are also generous in size, making their presence known alongside the homemade noodles and soup. JR Ebisue Station is a 4-minute walk away. I arrived at the shop around 10:50 on a Sunday and there were already 3 groups signed up, so I was the 4th to be called. I ordered Chinese noodles and silver rice balls. The chashu was thinly sliced and roasted, but be careful as it can get tough as time passes due to the heat of the soup. The noodles were springy and slippery, and incredibly delicious. The atmosphere was also nice, giving off a typical ramen restaurant vibe.

The timing was perfect as we arrived around 8 p.m. on a weekday without having to wait in line. The place started filling up with customers after we got there, and I could tell that the staff was very attentive since the capacity of the restaurant was around 8 people. The service was friendly and considerate, and the atmosphere was elegant with a nice background music. The seating was spacious and comfortable. Various people, including businessmen, older gentlemen, young men, couples, etc., were dining there. The presentation of the dishes was beautiful, but the taste wasn't exactly to my liking. The soup had a sparkle when it arrived, and the noodles were evenly cooked, chewy, and had a cute texture.

Chuka soba, Unlimited chuka soba - ¥1,000 Gin shari - They were out of rice, so they were sold out. I was curious after reading reviews. It's a popular place, but it wasn't crowded around noon, so I was able to get in without waiting. You need to fill out a form and wait to be called before entering. The lack of people is not because the shop isn't popular, but simply because the area is quiet. Maybe customers are flowing to the neighboring ramen battleground of Fukushima Station... First, I scooped about three small bowls of soup into another dish. They explained that the taste of the soup changes with the noodle's moisture, so try drinking the clear dish at the end. The soy sauce soup was concentrated with a pure umami flavor, no waste at all! Delicious!! The noodles were soft and smooth, not rough, making them a bit hard to pick up, but they had a good texture. The toppings were kept to a minimum to allow you to enjoy the soup, but I thought it was a bit lacking for ¥1,000. Finally, when I tried the clear dish, I was surprised to see how rich the flavor became without adding anything. The manager was always in the kitchen and couldn't be seen, but he never missed a greeting when customers entered or left. The counter seats were spacious enough, but the aisle was narrow, making it difficult to pass when customers sat deep, which was a bit disappointing.

It's a perfect dish for the scorching heat! White soy sauce is made with a ratio of soybeans 1-2 to wheat 8-9, resulting in a strong salty flavor with a high sugar content and a pleasant aroma. It's simply perfect!

I visited the restaurant on a regular day at 20:27 and entered without waiting. I purchased a meal ticket at the ticket machine and received my dish at 20:37. I ordered the Special Salt Ramen with double soup made from chicken and seafood, topped with chashu, seasoned egg, and extra bamboo shoots for ¥1,500. I also had a bottle of Kirin Heartland beer for ¥600. The soup was delicious, the noodles were smooth and tasty, and the chashu was excellent. There's a reason this place is in the top 100 ramen shops. I left with a satisfied belly!
