It was extremely crowded, but I went during lunchtime on a holiday! I waited for about an hour or so. I wanted to eat tarako pasta, so I chose that pasta here. The pasta was chewy and had plenty of tarako, it was very delicious!

Yamane-ya Fresh Pasta Research Institute is a famous place located on the 12th floor of Hankyu Umeda where there is always a long line. I finally got to go! They offer safe and delicious homemade fresh pasta made from 100% domestic wheat without any additives. I arrived around 7:30 pm on a weekday and waited for about 15 minutes in line. The menu is extensive, making it hard to decide what to order. I chose the Eggplant Margherita (¥1620) which had a large eggplant Margherita placed on top, with cherry tomatoes melted into the sauce. The eggplant was soft and juicy, and the mozzarella cheese was wonderfully gooey. I also tried the PEPETAMA from the research institute (¥1320), a popular dish with a cute presentation of leeks, egg yolk, and yuzu pepper scent that was both delicious and visually appealing. I usually prefer al dente pasta, but the chewy fresh pasta was also delicious! I ordered a single dish this time, but I was also interested in the set that comes with focaccia and a drink. I usually tend to frequent places I like, but for the past year, I've been trying to explore new places. I was told that the fresh pasta hardens quickly so I felt a sense of urgency to eat it quickly! It felt more like eating at a ramen shop rather than a leisurely dinner. It was good that plenty of vegetables were used. The pasta had flat noodles. It felt more like a transparent shirataki noodle than chewy.

I ordered the Saba Arrabbiata! It was a hearty Arrabbiata with lots of ingredients and a boneless, big mackerel. It had a lot of chili peppers in it! The mackerel was big, and I wasn't sure how to eat it after breaking it apart. While other restaurants were crowded, this one was not busy!

I arrived around 2:30 PM and there were 9 groups ahead of me, but I was able to enter the restaurant in about 30 minutes. I ordered Set A, which came with salad and focaccia, at the Pepetama laboratory. The pasta arrived in about 10 minutes! It wasn't too garlicky, but had a nice flavor of yuzu pepper, which made it delicious! There was yuzu oil provided for flavor variation, which made the dish refreshing and enjoyable until the last bite!

Hankyu Department Store, I visited Yamaneya on a weekday around 12 o'clock and was able to enter smoothly (^O^) I ordered a pasta dish called "Ebi Sanmai". The rich sauce with a shrimp flavor was amazing! The shrimp was firm and satisfying to eat. Of course, the noodles were also chewy and delicious.

Daibahatake at 1620, Yawatamai Kuro Natto at 1430. Today, I had plans so I arrived around 12 o'clock. I had to wait for over 30 groups, with a waiting time of about 1 hour. I spent time wandering around the 8th floor, checking out the Bizarre Plants shop. Finally, after about 1 and a half hours, I was able to enter. Daibahatake was amazing and the Yawatamai Kuro Natto had a taste that became addictive. Thank you so much.

I used it for lunch! A friend recommended it saying it was delicious, and it really was! The noodles were chewy, and they have a wide variety of pasta dishes, so I was very satisfied. It's a popular restaurant, so it might be better to avoid peak times.

I originally came for the carbonara, but I was drawn to the visually stunning "TKNP" dish on the staff menu! This was my second time trying fresh pasta, and I was incredibly impressed by the chewy texture of the noodles, almost making me doubt if my previous experience was real. The combination of egg and truffle sauce was excellent, and I already want to eat it again!

I arrived at Ikasumi Karasumi around 8:00 PM and had to wait for about 15 minutes with 6 groups ahead of me. The pasta was made with fresh pasta, so the noodles were chewy and delicious. Thank you. Initially, I was planning to eat at Ohba Hatake based on what I saw online, but I was drawn to this place's display when I arrived.

Visited Yamaneya Fresh Pasta Research Institute on the 12th floor of Hankyu for the first time. During lunchtime on a weekday, there was a wait of about 10 groups. After waiting in a chair for about 30 minutes, I was seated inside. The polite female staff apologized for the long wait. I ordered the Carbonara from the research institute (1,740 yen) as a single item, and the pasta arrived in about 9 minutes. It was very rich and flavorful, with a strong taste and a hint of black pepper. The fresh pasta was chewy and delicious, but I was overwhelmed by the intensity of the seasoning. It's natural for Carbonara to be heavy, but I ended up finishing it while drinking water throughout. For those concerned about the richness, I recommend the set menu with salad, focaccia, and a drink! Good service, delicious fresh pasta, but personally, considering the intensity of the flavor and cost performance, repeat visits may require further consideration...

Today, I had lunch with a friend in Umeda. We visited this place at my friend's request. The location is on the 12th floor of Hankyu Department Store Umeda Main Store. It's next to Hanaajitori, where I've been before. When we arrived, there were 23 groups ahead of us. After receiving a numbered ticket, we waited for about an hour before it was our turn. In this place, measures were taken for infection prevention, such as providing hand sanitizers at the entrance, staff wearing masks, and installing partitions between seats. I ordered the homemade smoked mackerel pasta and Lunch Set A (Focaccia + Salad), while my friend ordered the Yuba Cheese Ankake and Lunch Set B (Focaccia + Salad + Drink (Iced Tea)). First, the salad arrived. It was mainly lettuce with carrots on top. The taste was average. Next, the pasta arrived. The homemade smoked mackerel pasta had smoked mackerel on top with several chili peppers, paprika, greens, and capers. It had a spicy taste. The pasta was chewy and delicious. Finally, the focaccia arrived. It was slightly salty and had a firm texture. I'm interested in trying other menu items, so I'll definitely come back again.

I was able to enter the restaurant after waiting for about an hour due to the considerable number of people. The fresh pasta was very chewy and the menu was extensive. The salad even had a cute carrot face on it, and the interior of the restaurant was stylish and lovely. I would like to visit again. It was very delicious! Thank you for the meal!!

Tomato lovers will be thrilled with the tomato-rich pasta selection. It has a slightly spicy flavor, but it is balanced out by the dried baby sardines and shiso leaves. The Margherita with eggplant that my mother ordered is delicious with its large eggplant. Its impressive appearance also boosts the mood.

There were many unique pasta dishes to choose from! They all looked very delicious. I chose the white meat sauce pasta, which cost between 1,500 to 2,000 yen. It seems like there will be a wait whether you go for lunch or dinner on weekends, but you can take a number electronically and wait while exploring inside Hankyu Department Store, making the wait easier.

Umeda Hankyu Department Store 12th floor "Yamane-ya Fresh Pasta Laboratory" in Nakazakicho is a popular pasta shop. Before the 11:00 opening, there were already 20 groups waiting in line. I wrote my name down 15 minutes early and ended up being the 11th in line. However, they were not calling out names quickly enough. I wondered why. Finally, at 11:15, the 10th group was called. I checked and found out that I, as the 11th group, did not make it in the first round. There were 4 staff members, so seating all the customers at once should have taken only 5 minutes, right? The operation seemed poorly organized, with staff seating customers, providing water, and then calling out the next number. I decided to wait for the second round as the first group left at 11:30. When I was seated, I was given a table for 4 people even though I was alone. I ordered the Dashi Cream Mentaiko pasta for 1780 yen and a set with Focaccia and a drink for 350 yen. The food arrived in just 3 minutes. The pasta was delicious, with a creamy and slightly Japanese twist to the carbonara. The pasta was a bit soft, but still good. I added the yuzu sauce as recommended for the second half, but maybe I should not have used all of it. The set with Focaccia and iced coffee for 350 yen was a good deal, but the pasta itself was a bit pricey. The staff quickly cleaned and prepared empty tables, but there was a delay in calling out the waiting numbers. I left the restaurant at 12:00, and there were already 28 groups waiting. The slow operation may have contributed to the long wait.

I visited around 6:00 pm on Saturday, but there were already about 5 groups waiting. The staff seemed busy, so I wouldn't recommend it for those who want to eat slowly. I ordered the Eggplant Margherita. The eggplant was placed generously on top. The pasta was chewy and had a different texture from any pasta I've had before! It was delicious. Be careful, as it sticks together if you don't mix it quickly!

They use natural dashi like Hokkaido Rishiri kelp and safe oils. 【Interior】 They have both table and counter seats in a simple and cozy space with a lot of wood and natural materials. I have always loved this fresh pasta place. I was delighted to find out it is located on the 12th floor of Hankyu department store. As a fan of shellfish, I was drawn to the name "Mussels Kai". My friend tried the limited-time dashi mentaiko cream pasta. The mussels must be fresh, but unfortunately, they shrunk in size. Perhaps they were cooked too much. However, the shellfish flavor was incorporated into the sauce, which was really delicious. I wish the mussels were tastier though. As for the dashi mentaiko cream pasta, the dashi flavor was strong and it was really tasty! The yuzu for flavor variation was refreshing and paired well with the dish. I visited on a Friday night around 6:30 pm and there were around 5 groups waiting in line. It's definitely a popular spot. The restaurant is designed to be easy for solo diners to enter, so it's convenient if you don't mind waiting in line!
