In 2017, when I first came to the front of the store, there was a wooden board with a sign saying "Closed today." Since then, I have been coming to survey the front of the store about once a year. The reason for this "survey" is that I usually give up on entering the store, but I still come to the front with a glimmer of hope. Most of the time, I visit during business trips, and when I arrived at the store at 11:30, there was a sign saying "We will open around 14:30," or sometimes they are temporarily closed, or there is a sign saying they will open around 13:00, which makes me give up. Even when I have holidays like weekends or Fridays and Saturdays off, the timing doesn't match, and I just can't enter the store. That's why, in my 7th year of visiting, I finally visited on a Tuesday, which is the only day off, dedicating the entire day to Kashmir. The official opening time of the store is 12:00, but when I arrived at 11:30, there was a sign saying "We will open around 13:00." I adjusted the time at a coffee shop and visited again at 12:40, positioning myself as the 7th person in line. I was a little late. There are only 6 seats inside the store, so being the 7th person means I would have to wait for the second round. The people lining up were all exuding an air of enthusiasts or professionals, and there were also regular customers among them. Coming repeatedly to such a difficult store must mean that they have a job with a lot of flexibility in terms of time, lucky them. The store opened around 13:10. As expected, the first person was served at 13:24. At 13:43, three people left one after another, and I was prompted to take a seat. I ordered Keema with Mix B. Each dish is prepared very carefully. My curry was served right at 14:00. Although curry is just a single dish, the story behind each dish is not a simple one that you eat and leave the store within 10 minutes. I have eaten and recorded over 3000 curries to get to this point. But even when I had only eaten a few hundred, I visited several times and finally reached this one dish. I gratefully accepted it. Despite being called Keema curry, it is not dry but a wet Keema curry. The flowing curry, which is watery and loose, is mixed with plenty of minced meat and ingredients. The Mix (with egg) includes vegetables and a half-boiled egg mixed in that Keema curry. When you eat it, you'll be surprised by the taste of Kashmir. Before a certain prime minister casually talks about being "in a different dimension," I would like them to eat at least 10 to 20 servings of curry in Osaka. To be in a different dimension means that it is beyond the realm of countless experiences so far, yet it is still far beyond that realm, making it a different dimension. The taste of Kashmir was in that different dimension. It delivers a stimulation that is not spiciness. It stirs up your brain and shakes your skull as if swinging it around vigorously. You will experience a different dimension of chewing that persistently chews and savors the joy that slowly spreads. The uniqueness that continues to emit the genre of Kashmir, forming one genre, allowed me to enjoy the original spice curry from the legendary store. Ah, the impression I first learned when I first came to Osaka and ate spice curry has now resurfaced here. I persistently chewed and savored the pleasure of umami, stimulation, and the balance between them. I returned home experiencing the different dimension of mastication, and once again, I was invited to the journey of mastication in a different dimension.
