TAK, a natural cheese manufacturing facility in Itoshima. I visited this small shop while on an Itoshima drive because I had tried their cheese at a few of my favorite places and found it delicious. The shop is small but popular, with hand sanitizer at the entrance and restrictions on the number of customers allowed inside at once. They only open on weekends. They make natural cheese using fresh milk from local dairy farmers. They have a small selection of cheeses that look delicious. I bought three types: Rakuhaku Fig for 420 yen, Kohaku Homemade Slices (80g) for 650 yen, and Oil-marinated Cheese (105g) for 500 yen. I enjoyed the smooth texture of the Rakuhaku cheese with figs, the subtle flavor of the Kohaku slices, and the strong saltiness of the oil-marinated cheese. My favorite was the Rakuhaku. It's worth visiting during a drive, but they also have an online shop for convenience.

I first discovered the Cheese Factory at Ogappo Kappo Shimizu and was impressed by its deliciousness. Since then, I have purchased their cheese several times. The aged type, Kohaku, has a slightly firm texture and a strong bitterness from the mold, which I personally find to be a delicate balance between uniqueness and challenge. On the web, it is described as having a smooth texture with a rich flavor, and a light acidity and aroma, which makes me look forward to trying it. The freshness of their fresh type cheese is of high quality, and I truly feel that it is a delicious cheese made by Japanese people. The cheeses I have tried so far are: Fresh type, Raku Haku, Shironeri; Aged type, Kohaku, Kohaku Cumin, and Oil-marinated Cheese.

I was intrigued by the menu item at Kafuwa Coffee featuring cheese sandwiches made with Itoshima Cheese from TAK, so I looked up TAK and found out it was a cheese direct sales shop nearby. I visited the shop run by a husband and wife, where I could sample various unique cheeses. My cheese-loving husband was delighted! Among the cheeses, we purchased the smooth and creamy Rakuhaku, which goes well with jams, and the Kohaku, which pairs nicely with white wine and bread. We immediately tried the Kohaku on SANA's bread and toasted it - it was incredibly delicious! The Rakuhaku seems like it would go well with avocado, tomato salads, pasta, and other dishes, so we will enjoy it for a while. ☺︎

I found this shop on my way back from Kaigaya Coast and decided to stop by because it caught my attention. The customer service was very friendly and they let me sample almost all the cheeses. I love cheese, but I can't really choose my favorite just by listening to the descriptions, so I appreciate being able to taste before buying to avoid disappointment later! I ended up buying the following:
- Rakuhaku (400 yen): A fresh cheese that I tried with peach jam at the store, but at home I used honey instead. It reminded me of yogurt, very easy to eat and versatile in pairing with other foods. Definitely my favorite!
- Kohaku (Cumin) (660 yen): This was my favorite among the ones I bought! The store's sign said it goes well with beer, and it really does! Rich and flavorful with a strong cumin taste, a cheese to savor slowly.
- Kohaku (Soy lees pickled) (600 yen): A cheese with a strong salty flavor. Perfect for nibbling while drinking alcohol!
I always associated cheese with wine, but after trying Kohaku (Cumin) and discovering that it goes well with beer, it was a pleasant surprise! Although the shop is a bit far from my home, I would like to visit again when I'm in the area. Thank you for the delicious experience!

It seems that Itoshima is famous for its vegetables, but it also has a variety of other rich ingredients such as fish, branded meat, fruits, and milk. There is even a cheese-making workshop. The shop "TAK" is open only on Fridays, Saturdays, and the 135th Sunday of the year. They offer samples, making it enjoyable to choose from their various types of fresh cheeses like "Rakuhaku" with a yogurt-like flavor, "Shironeri" similar to mozzarella, and "Shiraito" that can be torn apart. We chose the semi-hard aged cheese "Kohaku" with cumin seeds, which we enjoyed with a red wine from New Zealand at home. It cost 1750 yen for three pieces. It was a unique experience, and we regretted not finishing it in one go, as the bitterness started to come out from the rind as time passed.

Recommended cheese shop in Fukuoka. The small shop had only 7 types of cheese when we visited, but each one was carefully made and had a gentle and friendly atmosphere. A lovely lady at the shop let us taste almost all the varieties, and we fell in love with "Rakuhaku", a fresh cheese with a yogurt-like acidity and a smooth, rich flavor. Not only the taste, but the price of 400 yen for 150g was also attractive. We paired it with ginger jam we bought from a bakery the day before. The spicy ginger flavor was nicely complemented by the smooth cheese, making the bread taste twice as delicious. It feels like our travel memories have also doubled in size.

The store is open on Fridays, Saturdays, and Sundays (1st, 3rd, 5th Sundays). It is recommended to call in advance before visiting. My favorite and recommended products are:
- Kohaku (cumin seeds) [650 yen]: The balance of cumin seeds is exquisite and addictive. It is sold at local markets but was about 130 yen more expensive there. I can't afford to buy it often, but I like to treat myself occasionally.
- Rakhak (400 yen): This is a must-buy product for me whenever I visit. It has a refreshing acidity and a smooth, spreadable cheese texture. It pairs well with jam on bread or crackers, but I mainly use it in cooking (especially as a complement to dishes). Since I don't use a lot at once, I feel like it's a good deal.

A cheese artisan who learned his craft in Hokkaido and Denmark has opened a cheese factory in Itoshima. The local community has been buzzing about it even before the opening. When you talk to him, his enthusiasm and hard work really come through. I look forward to getting to know him better and having more conversations. It's a mystery why he chose Itoshima over other places, but I'm delighted. Today was my first visit, so I tried two cheeses: 1) Kohaku - a semi-hard cheese aged for 3 months, and 2) cheese marinated in oil. They both seem like they would go well with alcohol.

With my partner, we went on a drive to Itoshima. While searching online, we came across information about a new homemade cheese shop in the western part of the area. We quickly found the place called "TAK," located along a new road that is not yet reflected on the navigation system. It is situated in a newly built building, overlooking Mount Kaya from the west. They use fresh milk from Itoshima to make natural cheese. We were intrigued and decided to try it out. Unfortunately, they only had two types of cheese left: a semi-hard cheese called Kohaku (600 yen) and a soft cheese called Rakuhaku (400 yen). We bought them and enjoyed them at home with some wine. The Kohaku cheese was incredibly delicious, with a perfect balance of aging flavors that spread in the mouth. It was a pleasant surprise. The Rakuhaku cheese was like yogurt and tasted great on crackers. The owner trained in cheese making in Hokkaido and Denmark. It seems like this place might become a new trend, but since it's run by a couple, production might not keep up with demand. Let's keep it a secret, but I couldn't resist sharing it on my blog.

I visited a natural cheese shop in Itoshima. The shop is only open two days a week, making it a hidden gem. They offer freshly made cheeses as well as aged cheeses. I purchased two types that caught my eye: "Rakuhaku" fresh cheese and "Kohaku" long-aged cheese. The fresh cheese can be enjoyed with jam or olive oil and salt like a salad. As for the aged cheese, it pairs well with red wine. I sliced it thinly and enjoyed it with Burgundy red wine, and it was absolutely delicious! They offer online shopping as well, but if you happen to be in Itoshima on the weekend, I highly recommend stopping by this shop. The cheese is so delicious and truly a treat!

In May 2020, I received natural cheeses from the cheese factory "TAK-TAK" in Itoshima City, Fukuoka Prefecture. Here are the products I tried:
- Kohaku Long-aged Cheese 80g for 750 yen: A strong flavor with a delicious taste. It pairs well with wine or sake.
- Oil-marinated Cheese 105g (solid content 50g) for 500 yen: It has a salty flavor and a crumbly texture. Enhanced with grape seed oil, pepper, oregano, and bay leaf. Great for finishing pasta, adding to salads, or enjoying with wine and bread.
I had them with wine from Hitomi Winery in Shiga, and they were delicious. The oil-marinated cheese had just the right amount of saltiness and herbal flavor, perfect with wine and bread. The long-aged cheese had a rich taste that paired well with wine. I didn't expect such delicious cheese from Fukuoka. I would definitely like to purchase them regularly. Thank you for the meal!
