A sushi restaurant opened in Daikoku Town in March this year. Press the intercom and enter the room. The elegant space is filled with rhythmic music. The seating is spacious and comfortable. The young head chef has gained a lot of experience and recently opened his own restaurant in Daikoku Town. We opted for the chef's course, starting with a delicate sashimi of small fish. The lemon-infused flavors were refreshing. Next came the first bonito with a refreshing acidity. Then, we enjoyed an oyster and seaweed dish, followed by grilled cherry salmon. A palate cleanser of seaweed salad was served before moving on to the nigiri sushi. The flounder had a rich aroma and a subtle sweetness. This was followed by two types of squid nigiri, each with its own unique texture and flavor profile. The sushi rice was well-balanced, with one type seasoned with red vinegar for a salty and rich taste, and the other with white vinegar for a sharp and sweet flavor. The fatty tuna belly was rich and aromatic, while the lean tuna had a firm umami flavor. The horse mackerel melted in the mouth, and the firefly squid chawanmushi was fragrant and flavorful. The golden snapper had a sweet and fatty taste, and the blackthroat seaperch had a smoky aroma. The thick-knife shellfish had a strong and intense flavor. The rare grilled shrimp was succulent, and the eel melted in the mouth. Additional dishes included simmered clams, bonito, and egg soup. The dessert was satisfying. The sushi was consistent and well-structured, making for an enjoyable dining experience.
"Minatomachi Sushinami" offers a wide variety of delicious sushi dishes such as bonito, sea urchin, eel, grilled whitefish, fatty tuna, amberjack, baby scallop, squid, horse mackerel, white shrimp, scallop, conger eel, red miso soup, fatty tuna with egg, and more.

Sushi Bar Haruka, which opened on January 21, 2023. The young 28-year-old head chef trained at various sushi restaurants of different genres before opening his own place. The interior was a calm and clean space. The sushi rice seasoned with red vinegar was delicious.

The atmosphere inside the restaurant was very nice and we were able to relax. Since there were only 5 seats at the counter, when I went with 5 friends, we had the place all to ourselves. The food was excellent, and the dishes and glasses were also wonderful. Recently, restaurants run by young chefs have been popular, and this place seems to be gaining popularity as well.
