"I went to eat my favorite sushi because August is my birthday month! First, there were five appetizers. The appetizers were not only beautiful but also unique! When I heard the explanation of the dishes, I was like, "Huh?" Launched Zasai, bamboo shoots and enoki mushrooms, spicy and sour soup, bamboo chicken, jellyfish and mozuku. Small dishes were lined up, and they were not common words you hear at a sushi restaurant like Zasai, bamboo chicken, and spicy and sour soup. When I asked the owner, he said it was a Chinese restaurant in Akasaka, Tokyo (which has won the Michelin award for eight consecutive years!). They recently opened a sushi restaurant in Hakata, so the appetizers also had a Chinese touch! The appetizers were all delicious, and my expectations for the following dishes were high. Next was the chicken soup noodles before the sushi. It was a chicken soup rich in flavor that is familiar in Fukuoka, like the soup that comes before yakitori or sukiyaki. It had smooth egg noodles, shredded chicken, and even duck meat... it was exquisite. Finally, the sushi. The vinegared rice was made with red vinegar, and the fresh ingredients were carefully prepared. The hand vinegar had ice in it to prevent the heat from the hands affecting the sushi, showing their attention to detail. The seasonal spring roll was filled with eel and cream cheese, and the salt on the side was five-spice salt! I have heard of curry salt and matcha salt, but five-spice salt was new to me. The combination of eel and the scent of sansho pepper in the salt was perfect. The uni and ikura bowl was amazing, with the soy sauce-marinated ikura just right, not too salty, and really delicious. The yolk soy sauce added richness, making it even better. The steamed egg custard had mushrooms and baby scallops with XO sauce! Despite being a Chinese dish, the steamed egg custard was delicious. The red shrimp marinated in Shaoxing wine, dessert being almond jelly... there were Chinese elements fused throughout, showing the owner's dedication to creating a new form of sushi that is surprising and enjoyable. Everything was delicious. Thank you for the meal!"
