Today, I took a break to get a physical examination, and the tests went smoothly! Once you're over 30, you start to notice some not-so-great things about your health... From tomorrow, I'll start taking better care of myself... But for today, I'm going to drink! (Contrary to what I felt at lunch after the physical examination...) I had my physical examination at Yamao Hospital, so I decided to explore the Nishishin area... I visited this restaurant for the first time in over 10 years! It was a place where my senior colleague from my part-time job used to take me after work because he liked the ramen here! Back in my student days, I admired the idea of going out for drinks after work... I was always happy when my senior said, "Let's stop by." I passed by the restaurant for the first time in a while, and memories from back then came flooding back... I was glad to see that the restaurant was still there! I decided to pay a visit after so long! The exterior looks the same as it did back then, but the interior seems to have been upgraded... It looks quite stylish now! There is a variety of liquor displayed above the kitchen... I wonder if they renovated the place? The restaurant has 8 counter seats, and 4 tables in the dining area. I looked at the menu and ordered something that caught my eye before heading home! - Skewers: Chicken skin (120 yen), Miso chicken thigh (180 yen), Pork belly (140 yen), Chicken meat (140 yen) - Grilled dumplings (550 yen) - Kirin Classic Lager, small bottle (590 yen) The skewers were cooked using steam convection instead of charcoal, which might make the oil drain off well and result in a refreshing taste! The skewers arrived at my seat in less than 10 minutes! The chicken skin had a chewy texture, and the soy-based sauce made it go well with alcohol! The Miso chicken thigh had a crispy texture, and the miso flavor and aroma were great! The pork belly and chicken meat had just the right amount of salt and were consistently delicious! Next up was the dumplings! They were larger than the usual size found in Hakata, with homemade wrappers! The chewy texture of the wrapper and the filling made of leeks, cabbage, ginger, and plenty of vegetables! The flavor was light and refreshing! With 6 large pieces, they filled me up more than I expected... For the final dish, I ordered the one I came here for in the first place! - Healthy Salt Ramen (580 yen) The name of the ramen is perfect for right after a physical examination! The restaurant uses pure domestically produced natural sea salt, made from seawater as the only ingredient and simmered slowly in a flat pot to retain the minerals of the sea salt... They then simmer pork bones and vegetables for a long time, remove the oil, and reduce the salt content while bringing out the richness, creaminess, and umami flavor! While I was transcribing the explanation, the Healthy Salt Ramen was ready! The toppings included only chashu pork and green onions, keeping it simple! Yes, that's it! It hasn't changed at all from back then! I started by trying the soup, which the restaurant emphasizes... It was thick and had a gentle pork bone base flavor! The balance between the saltiness and the umami of the pork bones was just right... It wasn't too strong, probably because the vegetables were fresh... It had a clear pork bone taste, making it very easy to eat! The thin straight noodles were cooked perfectly soft! The salt-seasoned pork belly chashu was light and flavorful! The overall light flavor made it perfect for a meal like this! It was a ramen that brought back nostalgic feelings after a long time! I haven't tried their popular Daruma ramen, so next time, I'll go with a few friends... It would be fun to go with the group we used to go with back then!

This is a restaurant run by a head chef who trained at the Gombei-kan, the birthplace of Hakata chicken skin. Of course, the chicken skin here is delicious. The highlight here is the way they cook the yakitori using a steam convection oven, which is a sight not often seen elsewhere. Unfortunately, other than the chicken skin, the menu is a bit lacking... so be sure to visit and enjoy the chicken skin.

Hello there! I visited "Niban-sama" in Nishijin! I arrived around 7:00 PM and when I entered, there was only one customer at the counter. I thought it was empty, but then one after another, a rush of customers came in! In no time, the place was packed. And so the exciting show began! The master and the part-timer fought to take orders, with just the two of them handling everything. It was like a theater performance! (Master) "This order needs to be served first!" "Make the drinks!" "That can wait for now!" (Part-timer) "Order for the table seats!" "Five draft beers coming up!" (Customer) "Um, is my order ready yet?" (Master) "Wait a moment! I'm making them in order!" It was entertaining just to watch. They were handling about 20 customers with just the two of them, managing the kitchen, the hall, and the drinks. It reminded me of my days working at "buaiso" when I was in college. As for the yakitori, can you believe it? They use a steam convection oven to speed up the process! The skin is their specialty, and overall, the food was delicious!

On a certain day in August of the 23rd year of Heisei, at 14-10 Sogahara, Sawara-ku, Fukuoka City, there is a place called "Yakitori Niban." I had heard rumors about it before, but had never visited. It definitely looks like a yakitori restaurant. Besides the signboard, there is no information about ramen being served. They are known for their delicious "torikawa" and "shio ramen." I took it as a sign of confidence. I entered the restaurant. Yep, it's exactly as I expected. It's a yakitori place through and through. The voice of Yukio Sawada from the AM radio playing in the background is evidence that it's daytime, and I'm in a yakitori restaurant. I'm the only customer inside, giving off a strong away game vibe, but I confidently ordered, "Ramen, please." Even though it's probably preparation time, they kindly obliged (´д`)ー3 After a short wait, it arrived. The healthy shio ramen for 500 yen. Of course, there is no overpowering pork bone smell. Here is a close-up of the soup. It's clear and has a similar feel to sukiyaki soup. Despite hearing that the base was pork bone, I hardly tasted any pork bone flavor. It's quite light. It might be good for a lunch on a hangover day. How about having alcohol lingering until noon for lunch? (lol) Here is a close-up of the noodles. They are slightly thicker than standard noodles. The aroma that comes up is gentle. As for the chashu, it seemed to have more saltiness than I expected. It's within an acceptable range, and it might actually serve as a good accent. The clear soup goes down smoothly. It's definitely a soup you can finish. I finish all kinds of soup, though (lol). Thank you for the meal. As for whether it's healthy or not... well, the soup was gentle on the body. No extra noodles, score: 70 points.

There are many yakitori restaurants in Fukuoka where you can also enjoy ramen, and this place seemed to have high ratings even on ramen-related websites, so I decided to give it a try. I visited on a Sunday after 8 PM and there was only one person sitting at the counter aside from a group having a party in a private room. The fluorescent lights inside were too bright, so I rated the atmosphere as 2.5. Some menu items like chicken skin were sold out due to it being a Sunday, so I ended up ordering the remaining skewers. You had to order a minimum of 2 skewers. The miso skewer I had was delicious. As for the sand liver (gizzard), I feel like all the places in Fukuoka overcook it, but I wonder if it's due to the type of chicken used. I ordered a rock potato shochu, and it was poured generously to the point of almost overflowing. Lastly, I had the healthy salt ramen as the finishing dish. It was light and the portion was small, making it a perfect way to end the meal. The ramen was very tasty. Overall, I think it's worth revisiting, but because many menu items were sold out, it's hard to give a thorough evaluation, so I'll rate it as 3.0 for now. I'll reassess if I visit on a day other than Sunday.

It seems that Wednesdays and Saturdays are often crowded with students, so I recommend checking before going.
