The noodles are medium-thick straight noodles that are flat. They are thinner compared to other tsukemen noodles but have a strong wheat flavor. They are smooth, chewy, and very delicious.

The dipping sauce is a rich combination of chicken and pork bone flavors. It is quite thick, and while I found the ramen broth a bit too strong in flavor before, it was just right for the tsukemen. Personally, I recommend the tsukemen.

Hidden ramen battleground, Takatsuki. From my memory, this shop was originally located in a residential area of Takatsuki City, and I went there about 20 years ago. At that time, salt ramen was rare and very delicious. Somehow, they have now relocated the main store to the bustling area between JR Takatsuki Station and Hankyu Takatsuki-shi Station. I sat at the counter and looked at the menu. They had a variety of options including seasonal cold ramen, but I decided to order the classic salt ramen with boiled egg (1000 yen). After a while, a shining bowl of ramen appeared. The noodles had a smooth, plastic-like texture. This is it, the noodles from Kinsei-san. The transparent soup was richer than it looked. The perfect match of these elements made my stomach happy. It's nice to see a shop I've known for a long time rise to fame and relocate like this.

The current number one in popularity is the "Awase Aji (with seasoned egg and large serving)." The rich soup combines pork bone, chicken, and fish-based broth with a strong umami flavor. I was torn between Kusoyajin's last swing, which is right nearby, but since I was in the mood for tsukemen today, I chose this place. Not realizing it was on the first floor of a building, I was distracted by the kimchi vending machine in front of the building and ended up passing by the shop three times before finally finding it, haha. I tried it right away, and the rich soup paired well with the noodles and was extremely delicious! The soup was smooth and had a rich flavor. The noodles were characterized by a moderate elasticity and a smooth, flat texture. As expected of a shop selected as one of the top 100, I felt the high level of quality. For those who order extra noodles, please be careful - in my case, the soup ran out before I could finish the noodles because they got too soaked in the soup, which was a bit disappointing. There's nothing more empty than eating just the noodles! I will definitely go back.

Today, I had plans in Takatsuki, so I stopped by this restaurant. It was a little past 12 o'clock, so the place was full, but luckily someone was leaving just as I arrived, so I was able to get in almost right away! I was glad because when I left, all the outside seats were taken! If I had been a little later, I might have had to wait. It was quite hot today, so I thought about getting a cold dish, but I decided on their special salt ramen that caught my eye on the menu! I'm looking forward to trying it! It did take a bit of time for it to come out. The clear soup looked delicious already! The broth is made from chicken and seafood, I think. I could taste a hint of yuzu in the aftertaste, so maybe there's yuzu in it. (Sorry if I'm wrong.) The salt flavor was strong but the finish was refreshing. The thin noodles paired well with the soup. I finished it in no time. This is a taste that would make you want to come back again and again!! Next time, I'll try a different dish! I always look forward to the limited edition noodles at Ramen Kinsei, and I end up trying them every time. This time, starting from September 1st, they introduced the Cold Shio Niboshi Mazesoba. The strong flavor of niboshi (dried baby sardines) and salty soup paired perfectly with the noodles. I also recommend trying the pork rice bowl on the side for a satisfying meal.

After the checkup, I visited a ramen shop called "Saiiro Ramen Kinsei" in Takatsuki City for lunch. It was packed with customers, but the ramen was delicious and flavorful. Located in a fiercely competitive ramen district, "Kinsei" is highly praised among the rest. Although they have expanded with multiple branches now, the origin is said to be here in Takatsuki. I visited around 1 pm on a weekday and was able to enter without waiting. There are about 9 counter seats. The menu includes basics like exquisite soy sauce, carefully crafted salt, and mixed noodles for a limited time. There are combination menus with toppings like chashu and seasoned egg. In addition, they offer rice dishes (roast pork bowl, rare pork bowl, fried rice) and fried chicken. I ordered the soy sauce ramen with seasoned egg and also the rare pork bowl as an add-on. The soy sauce ramen had a refreshing taste with clear broth. It was delicious with chashu, menma, and seasoned egg. The rare pork bowl had low-temperature cooked pork topped with onion sauce. The restaurant is clean and the seats are spacious, creating a relaxed atmosphere. The staff are friendly and efficient. Overall, it was a delicious dining experience.

I had some errands to run in Takatsuki today. It was really hot outside...^^; When it's this hot, I always crave cold noodles! So, I decided to visit this restaurant for the first time in 8 years. When I arrived at 7:30 pm, there were 6 people waiting outside. I was given the menu and ordered the Cold Shrimp Salt Ramen for 900 yen. After waiting for about 10 minutes, I was seated, and my food arrived in about 5 minutes. The dish included two slices of rare chashu, menma, kaiware, and green onions. The noodles were straight and flat, perfect for cold noodles. They had a good chewy texture and were very refreshing. The soup was a clear salt base with just the right amount of oil, and the aroma of shrimp was amazing. The transparent glass bowl also added to the coolness of the dish. Although the noodles were cold, I wished they were even colder. Overall, this ramen from a famous restaurant was delicious and really hit the spot on a hot day. Thank you for the meal.

It has a refreshing sweetness from soy sauce and a deep umami flavor from chicken oil. The soup is lightly seasoned, allowing the umami flavor of the broth to shine through, making it suitable for everyone. The noodles are slightly wavy, straight, medium-thin noodles. They are homemade noodles with a strong wheat flavor, chewy, and have a good texture. The toppings include char siu, green onions, menma, narutomaki, and two types of char siu: lean and fatty. The fatty char siu becomes sweeter as it warms up in the soup. The spiciness and bitterness of the menma add a nice accent to the sweet soup! The char siu rice bowl comes in a small tea bowl with stir-fried char siu, green onions, and seaweed on top of the rice. It was lightly seasoned and easy to enjoy. Thank you for the meal.

I ordered the "New Awase Ajitama" with a side of small rice, which I had never tried before. The New Awase Ajitama is a variation of the regular Ajitama ramen with bonito oil and spicy miso. The soup was a rich chicken and pork bone broth with seafood flavor, blended with bonito oil, and it was delicious. The noodles were slightly thin straight noodles, which I really enjoyed. The addition of spicy miso halfway through added a nice kick to the dish. Overall, both the new and old versions of the Ajitama ramen were delicious. The soup had a rich flavor of clam broth, with hints of chicken as well. The seasoning was salt-based. The noodles were medium-thick straight noodles with a chewy texture. The toppings included chashu, menma, kaiware, onion (Early Red), and mushroom duxelles. The chashu was a combination of tender pork shoulder and chicken breast, which I really enjoyed. I wanted to eat ramen, so I went to Hakkaisan at 11:30, but there were already 6 people waiting. So, I decided to go to Asu-Nagare and they were closed for the day. Then, I went to Kinsei for the first time in 7 years and there was a 2-person wait. Due to the heat, I ended up waiting and while looking at the menu, I was torn between three cold noodle options: Cold Shrimp Salt, Cold Anchovy Soy Sauce, and Spicy Cold Mazed Soba. I decided to challenge myself with the Spicy Cold Mazed Soba, which is only available until July 31st! I also added the perfect match of Char Siu Don (roast pork bowl) to my order. The Cold Miso Don was too salty, maybe I should have just stuck with regular soy sauce ramen. I remember having the salt ramen 7 years ago and it was too bland. I think I'll come back to try the soy sauce ramen again. The music playing in the restaurant was way too loud. When I left, there were already 13 people waiting. Truly a popular spot.
