Today I had plans at Canal City and decided to have dinner here! Initially, I wasn't in the mood for tonkatsu at all, but when I saw a sign at the entrance, I was drawn to it. "Is this made with prosciutto?" Prosciutto tonkatsu... I was so intrigued. I love prosciutto. Is it different in some way? So I immediately went into the restaurant to investigate! The interior had many table seats and gave an unexpectedly spacious impression. Without further ado, I ordered the dish that caught my eye! SaboRED Roast + SaboFilet Gold Medal Fillet Assortment Meal (2,035 yen). The roast and fillet were a luxurious combination that I couldn't resist trying. By the way, rice, miso soup, and cabbage were all-you-can-eat! Now, as I wait, I will transcribe the description provided. The meat is from Catalonia, Spain, and is made from red-haired Duroc pigs. It is a very rare pork, with a breeding amount 1/50th of Iberico pigs. Its melting point is 32°C, lower than normal body temperature, giving it a melt-in-your-mouth umami and deep richness! Just from the description alone, it sounds delicious! I can't wait to try it. While waiting, I enjoy the cabbage that arrived first. Sesame, citrus dressing, and tonkatsu sauce are added... The sauce is surprisingly spicy and tangy! I fill up on cabbage before the meat arrives! The main dish arrives with a cold glass of beer. The tonkatsu looks lightly pink and crispy on the outside. I sprinkle rock salt instead of sauce and take a bite... First, the roast. The crispy coating and tender pork... Seriously, it's so tender! I hardly need to chew, it feels like it's melting... The description was not just for show... This is amazing! Next is the fillet. Seriously... is it even softer than the roast... With less fat, you can taste the meat's flavor even more! Despite being lean, it has that melting sensation... I don't even need to chew... I might like the fillet more than the roast! The pork's umami and meaty flavor are well balanced, so maybe salt is better than sauce... This tonkatsu, perfect with beer, is a dish that I'll want to come back for occasionally... I'm glad I was drawn to the sign... I found some great pork! I hope it comes back as a limited-time menu again. Thank you for the meal!
