The miso ramen, with extra vegetables, has a rich and sweet taste with a light layer of lard on top. The Tonkotsu-based broth is rare for a popular diner, with a subtle chicken bone flavor and a hint of sweetness from the vegetables. The soup has a balanced taste of miso, sweetness, and a spicy kick at the end. The curly noodles complement the miso flavor well, and the stir-fried bean sprouts, onions, green onions, and carrots add a crunchy texture.
