I arrived at 11:20, and it seems like the restaurant opens at 11:30, but it was already open when I arrived. I was able to sit down right away without waiting. However, soon after, a lot of people came in and there was a line forming outside. Luckily, I already had my ticket! I purchased my meal ticket from the ticket machine. This time, I chose the salt ramen and the RED oil ramen. I was asked which one I wanted first, and I chose the salt ramen. The atmosphere inside the restaurant was nice, with jazz music playing. The owner, the owner's wife, and a female staff member were running the place. The salt ramen was served quickly. The soup was made with various ingredients such as animal bones, dried fish, and aromatic vegetables, giving it a rich flavor with the umami taste of dried fish and kelp coming through. The salt seasoning was well-balanced without any strange edges, tightening the overall flavor and allowing the broth's umami to shine through. The soup was overall well-behaved. The noodles were straight and thin, cooked firm with a chewy texture and a good wheat flavor. The seasoned pork had a strong flavor, and the bamboo shoots had a unique taste with a crunchy texture and sweetness. It was very easy to eat, but I found it a bit lacking in flavor overall. Next, the RED oil ramen was served. It was red... I was worried it would be extremely spicy, but it wasn't as spicy as it looked! The soy sauce-based sauce was rich in umami from dried fish and had a strong garlic flavor, which I really enjoyed! The noodles were flat and curly, cooked firm with a chewy texture that wrapped the soy sauce sauce nicely. The pork was flavorful and well-coated in the sauce, with a strong garlic taste. The bamboo shoots were also delicious. Finally, rice was served with the ramen, and after mixing it with the flavorful sauce, it was incredibly delicious. The RED ramen was extremely satisfying. Today, just discovering the deliciousness of this RED ramen made the visit here worthwhile. Delicious!
