Kokura Takumi's Pasta La Papelina @ Kokura Station - A study record of a visit to one of the most delicious spaghetti restaurants in Japan a while ago. I came to Fukuoka to study spaghetti, so I decided to extend my journey to Kokura, where one of the most delicious spaghetti restaurants in Japan is located. Oh, "Kokura Takumi's Pasta La Papelina"! The name has changed, hasn't it? Today, I was guided to my seat without being noticed by the chef or his wife, so I'll just sit here pretending not to notice and leave if I don't get caught. First, I ordered the recommended menu, which is an appetizer assortment using seafood from the nearby sea and wild plants from Kamonocho. First, salmon marinated and grilled saury. They come on separate plates. Next is the fish terrine sandwiched with wild plants. Probably wild plants collected by Mr. Tanigami from Kamonocho. Ricotta and tomato, corned beef and potato salad, and chingarei pate. While eating, I was told from behind, "Mr. Okubo, you smell like water. Why didn't you talk to me..." (laughs) So, we chatted about various things, and when asked about the spaghetti I ordered, it seems to have been changed to a dish that can only be eaten now, due to some persuasion (laughs). The last appetizer is probably sea bream... I forgot about it because I was so engrossed in the conversation. Then, I was handed a book called "The Story of Noriji Ono." I'm not sure if this is what they call a "special service" in the rules of "Tabelog," but I'll take a look. Oh, your eyes are sparkling. As expected of the third-generation HE Oyaji of Kokura. So, the dish that was changed and served was Venetian-style squid ink spaghetti with firefly squid. Firefly squid pepperoncino. Chef Ono adds kombu to the pepperon oil, which goes well with seafood. The spaghetti is delicious! Next is the second spaghetti. Spaghetti with sea urchin from Aijima and squid ink made in November with breadcrumbs added. This is great! I've eaten sea urchin spaghetti at various restaurants, but this restaurant is the best. I was thinking about having a second plate, but perhaps due to my age, it's my limit.
