Special Rich Fish and Seafood Chinese Soba Salt 1100 yen
This time, the noodles are from "Men Michi Shikata Kore Ima Sohonke" in Yotsuhashi. This is the third store in the Kore Ima brand, following "Menya Shikata Kore Ima Daito Honten" and "Men Shokun Kore Ima"... I wonder if this is the third store to be called "Sohonke"... It becomes unclear which is the main store... Is this a naming strategy to play on the psychology of "if they are in the same group, I have to try the main store"? Setting aside such speculations, I arrived at the restaurant around 5 pm on a weekday. It is located in the B1F area without going above ground after exiting the 2nd exit towards Yotsuhashi Station. As I was waiting, the owner or someone who seemed like the owner came out of the shop.
Owner: "Oh! Are you already waiting? I'm sorry for the wait!"
Myself: "No, no, take your time to prepare."
Surprisingly, the shop opened 10 minutes earlier than the scheduled time!
Myself: "Oh! Are you ready already?"
Owner: "Please, come in!"
It's rare for someone to open earlier than the scheduled time when people are waiting before opening... Many thanks! First, I bought a meal ticket. The three main items here are Hamaguri, Asari, and Shiro Tamari Shoyu. Since the follow-up reviewer mentioned Hamaguri, I will go for Asari... Wait, what!? Asari is not available! There's no Shiro Tamari either! Oh no! Instead, there's Fish Sauce Shoyu and Salt? Oh no! Well, in such situations, I'll go for salt based on my preference! So, I ordered the "Special Rich Fish and Seafood Chinese Soba Salt". Then, I handed the meal ticket to the staff and took the seat they guided me to.
The ramen was served in about 5 minutes. Now, let's eat!
Soup: The fish-based broth, especially the bonito flavor, is rich and flavorful. The saltiness is just right, not too strong or weak, perfectly balanced. The oil content is moderate, and the smoothness is exquisite. The balance is really good!
Noodles: The noodles are slightly high in water content and flat. They have a pleasant elasticity and a chewy texture. The texture is so enjoyable that it becomes addictive as you eat more.
Toppings: The thinly sliced pork shoulder loin is large and flavorful, with two slices. Despite being thin, the pork itself is flavorful and delicious. The seasoned egg is hot and runny, showing excellent temperature control in its preparation. The seasoning is mild, but the sweetness of the egg yolk shines through, making it perfect. The bamboo shoots are thinly sliced, which is a subtle but satisfying detail. The green onions are crispy and add a refreshing touch.
Overall, even though the menu changed unexpectedly to salt, the quality was satisfying. With the customer service included, I give it 4 stars!
