I have been to Hakata/Fukuoka several times, but I only recently found out that "torikawa" is a specialty there. When you think of chicken skin, you usually think of the skin of the meat, and when you go to a yakitori restaurant, you see them grilling the skin directly. There are several famous shops in Fukuoka city, particularly in the Hakata and Yakuin areas, and this is one of them. This shop is considered the main store, but it doesn't have the traditional feel of a main store, making it more approachable. We started with cucumber marinated in moromi (199 yen) as a snack with our drinks. The cucumber dipped in moromi miso had a unique charm as a snack with alcohol. Then came the torikawa (99 yen for tare, 99 yen for salt) and pork belly (95 yen). The torikawa, which is the skin of the neck, is the highlight. By repeatedly grilling the skin of the neck, the crispy texture is emphasized in the salt-flavored torikawa. By removing the fat, even those who are not fond of chicken skin may change their perception. The torikawa skewers dipped in sauce have a different appeal from the salt skewers, allowing you to feel the texture of the meat around the skin. The pork belly, while less prominent than the torikawa, has a firm texture due to grilling and removing the fat. We also tried atsuage (249 yen), a grilled dish other than meat. The dishes like bell peppers (95 yen) and garlic (95 yen) were grilled on an iron plate. The garlic was grilled with the skin on, making it hot and ready to eat when peeled. We also tried liver (95 yen), minced meatballs (95 yen), tomato-wrapped bacon (199 yen), and darm (95 yen). The darm turned out to be the intestines of pigs and other animals, providing a unique texture different from cartilage. We ended with an encore of torikawa with liver. The locals seem to order several torikawa skewers at once, showing how deeply ingrained the torikawa culture is. The special finishing soup with natural collagen is a nice touch. We enjoyed sake (589 yen for 2 cups) and then switched to a red heaven star shochu hot water (299 yen) to round off the meal. The affordable price, easy accessibility, and the ability to truly appreciate the appeal of torikawa make it stand out. It's not just skin; it's a unique experience that was truly enjoyable.
