About an 8-minute walk from Hakata Station's Chikushi Exit, I visited "Hakata Kaisen Tsumamu," which had just reopened in October 2024! The concept is "A seafood tavern filled with delicious Hakata dishes." The chef, who has a background as a sushi chef, prepares sushi, sashimi, robatayaki, oden, and more, making it a delightful place to enjoy various dishes.
**Restaurant Atmosphere:** Since it has just opened, the interior is very clean. There’s an open counter seating area as well as private rooms for a more intimate experience. The staff provided very attentive service and personally guided me to my seat.
**Menu:** Along with sushi, the menu includes a rich variety of items such as sashimi, basashi (raw horse meat), motsunabe (beef stomach hot pot), and robatayaki. The selection can be overwhelming! Alcohol options like beer, whiskey, shochu, sours, and wine are available, but it seems the restaurant emphasizes its sake selection. It's also convenient to order using a QR code, and the ordering site is user-friendly with photos.

- **Wara-grilled Fresh Fish Choregi Salad… ¥748**
This salad is filled with fresh vegetables like lettuce, purple cabbage, and mini tomatoes, topped with a generous amount of bonito sashimi! I was surprised by the quantity of the bonito; many seafood salads often skimp on the sashimi, but here, it is quite substantial!
- **Tsumamu's Signature Assorted Sashimi (7 types, for 1 person)… ¥2,178**
The volume of this dish is astonishing! I found myself double-checking, "Is this really just one serving?" The sashimi included items like sawara, kanpachi, tai, salmon, octopus, scallops, isaki, tuna, and two types of bonito as a bonus. This platter not only looks fantastic but also boasts excellent freshness, without any wateriness—the fish is firm and well-prepared. The sweetness of the scallop, in particular, was remarkable.
- **Wara-grilled Tuna… ¥968**
I ordered this from the recommended menu. Its charred surface offers a delightful smokiness that enhances the tuna's flavor, allowing it to burst in rich umami in the mouth.
- **Haramasada Fresh Oysters in Shell… ¥968**
Upon arrival, a wonderful ocean scent wafted from these oysters. They are quite luxurious! Grilling them results in a firmer texture, and you can enjoy them with lemon juice or ponzu sauce for different flavors.
- **Oden Assortment (5 types)… ¥770**
Also from the recommended menu, this day’s selection included daikon, konjac, chikuwa, egg, and chicken tsukune. The dashi flavor permeates deeply, making it a perfect winter dish!
- **Mentaiko Chawanmushi… ¥528**
Whenever I visit a sushi restaurant, I can't resist ordering chawanmushi. Here, big pieces of mentaiko (spicy cod roe) are mixed in, and when you break it apart, the spicy kick of the mentaiko adds a great accent! A true local delicacy from Hakata.
**Summary:** In this calming Japanese-style environment, I thoroughly enjoyed delicious seafood dishes. This restaurant is perfect for business meetings, dates, or even families. The "Tsumamu Signature Assorted Sashimi" is a must-try! Thank you for the wonderful meal!
