I visited a sushi restaurant called "Sushi Dokoro Shizuka" in Maruyama. I found the restaurant in a magazine and decided to check it out. It is located in the underground food court on the basement floor, directly connected to exit 3 of the Nishi 28-chome subway station. The parking lot is small, located on a narrow lane north of the Sun Building, with limited parking spaces. The restaurant has a clean and inviting interior, with a half-glass window allowing a glimpse inside. There is an L-shaped counter, tatami seating, and regular table seating. The young chef is skillfully making sushi for the almost full house of customers. The lunch menu offers four options: seafood chirashi (850 yen), orchid (9 pieces of sushi, soup, dessert) (1,000 yen), lotus (10 pieces of sushi, soup, dessert) (1,600 yen), and monthly special lunch (mini chirashi, croquette, simmered dish, soup, salad, dessert) (1,600 yen). I ordered the lotus set for 1,600 yen. The chef was engaging in conversation with customers at the counter while skillfully making sushi without a break. The lotus set included: 1. Black halibut 2. Salmon 3. Shime saba 4. Sweet shrimp 5. Tuna 6. Surume squid 7. Golden eye snapper 8. Flying fish roe 9. Salmon roe 10. Hair crab with miso 11. New pickled mackerel The sushi rice was slightly firm and small in size, with a gentle vinegar flavor and low acidity, complementing all types of toppings. The toppings were brushed with a light soy sauce glaze, eliminating the need for additional soy sauce. Among the lotus set, the black halibut, tuna, and surume squid were particularly delicious. The black halibut was extremely fresh with a crunchy texture and increasing sweetness as you chew. The tuna had a tender texture with a thin soy sauce glaze enhancing its umami. The surume squid had a crispy texture similar to dried squid, easy to bite through with a strong sweetness. For dessert, I ordered a kanpyo roll, which had a good balance of sweetness with sesame and wasabi, providing a pleasant aroma.
