This time, the noodles are from "Menya Ikkei" in Ibaraki... no, Ibaraki. The shop was opened by someone who trained at "Asunagare" in Takatsuki in 2009 (from the review by the follow reviewer). I just had ramen at Asunagare earlier, so I made a joke about having a master-disciple consecutive meal. When I visited right after the shop opened on a weekday, there were 4 customers ahead of me. Soon after, there were 3 more customers waiting, and the shop quickly became full. It seemed like customers were coming in as soon as others left, creating a busy atmosphere. Even on weekdays, having a few people waiting in line during the lunch hour is not uncommon here. Now, for the order. Just like the shop where the owner trained, they recommend the salt ramen, and they also have tsukemen available only at night. They also had a limited-time "Takehashi Black" on offer. I decided to play it safe and ordered the "Salt Ramen." You order verbally and pay at the register near the entrance after eating. When I placed my order, they were preparing the ramen for the customers ahead of me, but my order was served in less than 10 minutes. Now, let's eat!
Soup: You can taste various types of dashi, but the main flavor is clam... I think? The subtle sweetness of the clam broth permeates gently. There's also a good amount of chicken oil, giving it a rich flavor. The saltiness is tightly balanced, not too salty, but just right... A high-level salt soup that doesn't lose to the training shop!
Noodles: The thin noodles contain whole wheat flour. They are cooked al dente by default, with a strong chewiness! The flavor is also very strong! It's delicious, but this strong flavor may be a bit too assertive... Hmm, I sound quite picky even to myself.
Toppings: The rare chashu is moist and flavorful. Not only does the pink color stand out, but the meat inside is also of good quality. The crunchy bamboo shoot, almost like menma, was also good. The thinly sliced onion adds a light and fluffy texture with no spiciness. The spicy flavor of kaiware was a nice touch. Thank you for the meal. It's a bowl that rivals the quality of the master's, no doubt, but personally, I felt a bit bothered by the strong presence of the noodles, falling slightly short. However, many people might say, "But these noodles are great!" ===========
