I arrived in Joetsu and visited a ramen shop that ranked 3rd at the New York Japan Fest 2019 with a rating of 3.7 on Tabelog. The shop is called "KUCHE." It's a popular spot with a stylish and calm atmosphere. I ordered the "tsukemen (KURO)" for ¥1000 and added an option of rice for an extra ¥100. The presentation was beautiful with noodles in one bowl, dipping sauce in another, and toppings on a separate plate. The dipping sauce had a unique and addictive flavor, a mix of soy sauce and seafood essence. The noodles were smooth and had a great chewy texture. The chashu was tender and juicy, the seasoned egg was flavorful, and the radish added a nice touch. I couldn't resist ordering rice to mix with the amazing dipping sauce. The staff also offered to dilute the sauce with a light broth, making it easy to finish. From start to finish, the tsukemen was delicious and definitely worth trying!

I visited this restaurant for lunch. I had been curious about it for a while. I ordered the Tsukemen KURO. The dipping broth is served on top of a dipping plate. I'm not a fan of stacking the plate on top of the bowl. First, the dipping broth. It is rich but delicious. It is not greasy. There is also fish powder in it. Some reviews mentioned a sweetness that reminds them of yakiniku sauce. I can understand the sweetness, but I'm not sure about the yakiniku sauce comparison. Sweetness can be a matter of personal preference. I'm okay with it. The noodles are medium-thick and round, and they go well with the dipping broth. The chashu on top is very tender, which is fantastic. I am satisfied with this, but if you like meat, the extra chashu might be a good addition. The egg is slightly firm in the center, leaning towards half-cooked. Overall, it was a well put-together tsukemen. Thank you for the meal.

It's difficult to accurately describe the taste of the dipping sauce, but it had a nice balance of richness and lightness. It reminded me of dipping the noodles in barbecue sauce. My friend enjoyed the barbecue-flavored tsukemen, but I was not a big fan of the sweetness and barbecue sauce taste. It was full, so I had to wait a bit before entering - Couple points - If you order two, you can share. - Taste etc. - The noodles are thin and resemble somen, maybe due to the type of wheat flour used. It has burnt green onions, and the char siu is lightly seared, which I liked. It has shiso, so some people may not like it. The soup is made from dried fish and soy sauce. I prefer the tsukemen-style base. The bowl with grilled chicken and crunchy onions was definitely delicious. - Other - Cashless: No, Tissues: Paper napkins available, Restroom: Yes, Motorcycle parking available. While I enjoyed the ramen, I still prefer the excitement and surprise of the tsuke, making it my favorite. There are many delicious ramen shops between Hankyu Kamishinjo Station and Hankyu Awaji Station, it's quite a competitive area. Even on weekdays, there were customers waiting and writing down their names. I ordered the "tsukemen KURO". The thick dipping sauce looked rich, paired with slightly thick and chewy noodles. Delicious! It seems like the sauce contains burnt soy sauce with meat and seafood. When you slurp the noodles, various ingredients come along, adding to the enjoyable texture. The remaining dipping sauce was delicious until the last drop when mixed with soup. Thank you for the meal!

I arrived at the restaurant at 11:40 on Monday. There were about 3 groups of customers already there. There were still seats available at the counter. I sat at the counter and ordered the Tsuke KURO (regular). Both the soup and noodles were very delicious. It seemed like many other customers ordered medium or larger portions than the regular size. The regular size might be a bit small for some people.

I took a sip of the soup... so good. It's hard to put into words, but it's a rich, creamy soup with a punch. I love rich soups like this. The noodles are medium-thin and straight, which goes well with the rich soup. The egg is half-cooked, and although it may not be obvious at first glance, it's there. They recommended adding rice at the end, and although I didn't order it, I'm sure it would be delicious. I didn't get the rice and just finished all the soup. I will definitely come back for more. I went around 1 pm on Saturday. There was about a 20-minute wait. I usually order the KURO tsukemen, but this time I tried the HAKU. The bowl was very hot. It wasn't as rich in flavor as the KURO, but it had a strong seafood taste and was delicious.

On weekdays before 7:00 PM. 2 customers arrived before me, then 1 customer after me. Upon entering, I was greeted with a cheerful greeting, which made me feel very good. The staff members at the restaurant engage in a lot of conversation. I ordered the "kuro tsukemen" for ¥960 with extra noodles. It took about 8 minutes. The noodles seemed to be homemade, but honestly, I didn't find them particularly delicious. They lacked a special flavor and firmness. The soup was prepared by heating it strongly, similar to miso ramen. It had a strong bonito or seafood flavor. The soup was rich and sweet, with a strong taste. Personally, I felt that with thin noodles, the soup was too overpowering. The chashu was on the smaller side. It was tender and flavorful, but the meatiness was mostly lost in the soup. The egg had no flavor. Surprisingly, the greens were good, providing a refreshing contrast to the rich soup. As a side note, they worked well as a palate cleanser. The taste was good. Personally, I would rate it around 3.7 based on taste alone, but when considering the customer service and the atmosphere of the restaurant, the overall rating seems reasonable at 3.3.
