A person who trained for 10 years at Ginza Kyubey has recently opened their own restaurant. I knew about the opening since it was in my local area, but I hadn't been able to visit until now, thanks to a recommendation from a friend who runs a fish shop. I finally got to go and opted for the sushi and grilled dish set, which was a 15,000 yen course. The sushi rice is made with a mix of red vinegar and white vinegar, and the rice is old Koshihikari from Fukushima, so you can really appreciate each grain. This old rice has less moisture, making it harder to absorb the sushi vinegar. Instead of the usual powdered tea served at sushi restaurants, they offered brewed green tea from Miyagi as the after-dinner drink. I ended up chatting with the customer next to me, and we wrapped up our meal with a beer instead.

The 15,000 yen course with appetizers in the Gyoen area offers delicious sushi at such a great price! The cost performance is incredible and it's the best. There were many drink options available, allowing us to enjoy various choices, which was fantastic. The chef was also very kind, creating a wonderful atmosphere.

I visited last night! On this occasion, I chose to go with an à la carte style instead of a set course. The first dish, the salmon roe served as an appetizer, was delicious. Then, I had the grilled fish called mutsu, which was wonderful. The melt-in-your-mouth nigiri included squid, shellfish, sea bream, lean tuna, medium fatty tuna, fatty tuna, kohada, eel, and two types of sea urchin. Both types of fatty tuna were incredibly tender, and the eel had a lovely toasted flavor, while the kohada had a refreshing texture. Everything was delicious. The sushi rice was adjusted according to the topping, just like in my training days, and it matched perfectly. The chef's service was also excellent. Thank you for the meal!

The chef, who has a unique haircut reminiscent of a "U" shape, previously worked at Kyubey and Yoshida in Hatagaya before starting his own venture at Makari Sushi. The restaurant is located at the former site of Hot Carrot, and it seems that they are currently renting the space, which might only be available until October—so if you want to try this sushi place, now is the time! ▷ There are 5 counter seats and 2 tables. ▷ The omakase options are: sushi-only for 11,000 yen or a combination of appetizers and sushi for 16,500 yen, with a la carte ordering also available. ▷ Appetizers are served first, followed by sushi. ▷ The rice (shari) is customized, with two types used depending on the topping (neta). ▷ The restaurant puts a strong emphasis on tuna, offering akami, chu-toro, and o-toro, along with tuna rolls; the tuna served here is excellent and flavorful, possibly sourced from Yamazaki. This visit featured fresh mackerel and live shrimp, among other items. ▷ The sake is served in a masu (square wooden cup) filled to the brim.

I have been there about six times. The chef is very kind and takes into account my preferences as well as today's recommendations, pairing them with sake.

The name comes from the fact that it shares a location with a curry shop. It might be better to enjoy the dishes à la carte.
