Ramen Workshop RISE Ramen Interact Safe Entertainment Kawachi Salt - 780 yen One of the signature dishes, Kawachi Salt ramen. The clear golden soup is made from animal-based umami, as well as shellfish and dried fish. It has a moderate sweetness and a strong mineral taste of salt. The fatty pork belly chashu melts into the soup, adding more flavor. The thin noodles have a firm texture and a good flavor. The menma also absorbs the umami of the broth well and is delicious enough to be enjoyed with beer. It is definitely one of the best salt ramen in Kansai. THE Miso in Front - 870 yen The soup is made from oyster, shrimp, fish, chicken, and pork broth, blended with rice koji miso from Nagano Prefecture and red miso from Aichi Prefecture. The strong flavor of red miso is prominent at first, followed by a rush of umami from the seafood. The mid-palate reveals the sweetness of miso, and the taste of miso fades away like the ebb of the tide. The noodles are chewy and have a unique texture, different from Sapporo-style noodles. They go well with the soup. The thick and flavorful pork belly chashu also complements the soup perfectly. Dipping Noodles with Shrimp Salt Base - 880 yen The sparkling dipping sauce may look salty and flavorful, but it also has a strong umami taste, with the aroma of shrimp spreading out. The crushed dried shrimp on the surface adds a fragrant flavor. The noodles are chewy, moist, and have a unique texture that clings to the tongue. The large pork belly chashu on top imparts its flavor to the noodles, making them delicious. The menma, seasoned with black pepper and broth, is also very tasty. Even though the soup dilution is currently on hold, the addictive taste of the dipping sauce makes it hard to stop slurping. This place may not actively promote itself online, but their skills are outstanding. The staff, especially the motherly waitress, provides excellent service. Sometimes, she exchanges strong words with the fatherly chef in the kitchen, adding to the charm of the place. It's a restaurant that you'll love more and more when you visit. Definitely worth trying!

Ordered Kawauchi no Shio ramen. Arrived at 11:40 AM, no waiting time but had to wait a few minutes outside as the seats were full. Eventually got a seat inside. The restaurant is run by an elderly couple and their son, which was a heartwarming sight. It was my first visit, so I went with the Kawauchi no Shio ramen. The lady suggested the lunch set with rice, but I stuck with just ramen. The owner's kindness was evident in the prices. The ramen arrived in about 5 minutes, with a slightly cloudy salt broth that smelled of clams, whetting the appetite. The first sip revealed a delicious broth with a strong clam flavor and saltiness. The straight thin noodles were cooked just right, complementing the broth perfectly. The chashu was tender and flavorful, melting in the mouth. The crunchy menma and crispy green onions added great texture. The table condiment, spicy chili pepper, was a personal favorite. The staff's hospitality created a pleasant dining experience. Will definitely go back! Enjoyed the meal!

I went for lunch and had shrimp salt tsukemen. The dipping broth was salty but had a strong shrimp flavor, very delicious. It was quite oily. The saltiness was also quite strong. The noodles were slightly thick and chewy. The large piece of chashu was very tasty. It was soft enough to cut with chopsticks. The taste was light, and dipping the noodles in the broth made it even better. They also had chashu available for takeout. The menma had a nice chewy texture. The soft-boiled egg had a runny yolk. This restaurant is known for their salt-based dishes. I would like to try their warm salt ramen next time.

This time, I visited the restaurant to enjoy a summer tradition, cold ramen. At RISE, they offer a dish called "涼塩" which is a cold ramen with a refreshing taste. All the menu options are delicious, so it's always hard to decide what to order. However, this time I specifically wanted to try the cold ramen, so I chose the "涼塩". Normally, the ramen comes with vegetables, but I asked to have them removed since I don't like them. The owner recommended not getting the large size for the regular "河内の塩" ramen because the soup is delicate. So, I asked if it's okay to get the large size for the "涼塩" ramen, and the owner assured me it was fine. When the dish arrived, I was amazed by the soup - it was completely different from the regular warm ramen soup. It had a good balance of fish broth and a punchy flavor, without being too oily. The temperature was just right, not too hot or too cold. The noodles were smooth yet firm, with a satisfying chewiness. I enjoyed every last drop in the bowl. Thank you for the delicious meal.

On this day along the Kintetsu line, the last stop is a popular ramen shop in Yao! Yao is famous for Tonkatsu Manje, but this ramen shop, "Ramen Kobo RISE," is popular among ramen enthusiasts. Recently, there has been a rise in trendy and stylish ramen shops, but this place is a traditional ramen shop. If you're a solo female diner, you might feel a bit intimidated! The entrance door is covered with copies of magazines that have featured the shop, making it impossible to see inside, which might add to your anxiety when visiting for the first time. But let's gather our courage and go in first! The shop owner, who exudes an artisan vibe, is busy in the kitchen. This shop, which will celebrate its 13th anniversary in August this year, is run by the son who took over from his parents, preserving the taste and atmosphere of the shop, becoming a beloved establishment in Yao. We tried the signature clam salt ramen and shrimp soy sauce ramen. The warm and friendly service from what seemed to be the father and mother was a nice touch. For someone like me who is used to trendy ramen shops, this family-run establishment felt refreshingly new and wonderful. As we left the shop, we were greeted by the quiet riverside. The menu mentioned that the delicate soup would be enhanced by ordering extra noodles (1.5 times the normal amount), but the regular portion was just right for me as the chashu was quite generous. I finally went to the ramen shop in Yawata that I've been really curious about (*-`ω´-)9 Yossha!! I've been bookmarking it for a while, but I didn't have a chance to go there because of its location. It's called Ramen Koubou RISE. The shop is located about a 10-minute walk from Kintetsu Yawata Station. We arrived around 6:30 pm and were able to get in without waiting in line. I ordered the Kawauchi Shio ramen, and my partner ordered the Ebi Shoyu ramen. It took about 20 minutes for our orders to arrive. The soup has a golden color and is full of clam umami flavor. The noodles are thin straight noodles with a good texture. The toppings include a large slice of chashu, menma, white negi, and a boiled egg. I also tried a bit of my partner's Ebi Shoyu ramen. The shrimp flavor in the rich soy sauce soup was fantastic, and the noodles were thick and flat. The toppings were almost the same as the Shio ramen, except the negi in the Shio ramen was white negi, while in the Shoyu ramen, it was chopped green negi. Both bowls cost 750 yen, which is quite reasonable. Other menu items are also priced at 750 yen for ramen and 880 yen for tsukemen, making it a very affordable place overall. They even offer free small rice during lunchtime, which is amazing customer service. The cleanliness and atmosphere of the restaurant were great, and it was definitely worth traveling to Yawata just for this shop. Thank you for the meal! m(_ _)m

I hadn't been there recently, so I decided to stop by for lunch. It was full inside, so I waited outside and looked at the menu. I saw the word "shrimp" and knew what I wanted. (laughs) Shrimp soy sauce ramen. I went inside, ordered, and waited. It was brought to me in about 10 minutes. I took a sip of the soup, but it didn't have as much shrimp flavor or aroma as I had hoped for, so I was disappointed. Some reviews said it was amazing, but oh well. The soup itself was light and delicious.

The dipping sauce is mainly salt, with a hint of shrimp flavor that is not overpowering. The soft-boiled egg is rich and flavorful, infused with soy sauce. The chashu pork is also seasoned with soy sauce, similar to what you would find in Jiro-style or rich ramen. Note that the noodle portion listed is before cooking, so it ended up being quite a large serving, probably around 600g.

During my journey to an outing, I saw the hunger sign flashing and decided to visit a slightly unique ramen shop - I will have the Kawachi salt ramen♪ As someone who isn't a fan of rich ramen, the clam flavor and saltiness of this ramen are comforting, especially when paired with straight noodles♫ Once inside the shop, the warm motherly figure who takes care of things like where to put your belongings and seating arrangements is a nice change from the usual tired-looking staff. The chashu has a meaty texture, but I might prefer it a bit thinner in this soup. I would love to stop by again when I come back here♪ Thank you for the meal♫

"I had the 'Ebi Shio Base Tsukemen' for 880 yen after having my first bowl in Ibaraki City in December 2022. I arrived around 1 pm and parked my car in the restaurant's parking space. It had been six years since I last had tsukemen at RISE, and it was my first time trying the ebi shio base. The dish arrived promptly. The noodles were thin-medium thickness for tsukemen, topped with large slices of chashu and menma. The dipping soup was a slightly cloudy salt-based broth, with a hint of shrimp aroma from the sprinkle of ichimi. Let's dig in! Dipping the noodles into the soup, the taste was delicious. The shrimp flavor was more pronounced than I expected, and the saltiness from the broth was quite strong. It leaned towards a seafood umami flavor, so the saltiness wasn't a concern for me. In fact, it suited my taste preferences well. The noodles had a smooth texture and absorbed the soup nicely. The menma was unexpectedly tasty, a unique specialty of RISE. Today, my husband and I went to Ramen Kobo RISE in Yao for lunch. I couldn't decide what to order, but ended up choosing the "Ebi Shoyu" ramen. Today, my wife and I went to Yawata to visit Ramen Kobo RISE! I had been wanting to try this place for a while, so I was looking forward to it. I ordered the "Kawachi no Shio" ramen, which I had been wanting to try. The soup had a strong seafood flavor and was delicious! The thin straight noodles had a nice firm texture and were very satisfying to eat. Personally, I really liked the crunchy menma (seasoned bamboo shoots). Thank you for the meal!

Visit date and time: 11:30 on Sunday Wait time: None Menu: Kawachi Salt Ramen 780 yen + Large portion 100 yen + Flavored egg 100 yen I visited at the opening time and it was almost full. We just managed to slip in at the end of the first round. After we entered, no other customers came until we left, so if the timing is right, you might be able to get in without waiting around 12 o'clock. It was my first visit, so I ordered the "Kawachi Salt" written at the very beginning of the menu. The thin noodles and clear soup were delicious. However, it felt a bit suffocating due to the excessive COVID-19 measures. If I were to visit again, it would probably be after the situation has completely settled down. Thank you for the meal.
