I heard that a bar where you can enjoy a lot of sake has opened in the basement of Shibuya Parco. I went to check it out: "Mirai Nihon Saketen & SAKEBAR." The main area is standing room, but there are a few small tables as well. Here, you can enjoy over 120 types of sake for a 60-minute all-you-can-drink deal for just 2000 yen. There is so much sake that it would be impossible to drink it all! This is an irresistible space for sake lovers! Inside the refrigerator, there is a line-up of Kubota sake, which is included in the all-you-can-drink offer as well! It sounds fun to go with a few friends and compare different sakes together. So, let's start drinking! The food consisted mainly of snacks. I can't quite remember which sakes I had, so please take a look at the photos! The snacks included hijiki and egg salad, non-fried beef katsu, and grilled fish. These paired perfectly with the sake. There were also some striking sakes. Since it's an all-you-can-drink, it's easy to try something new! I haven't done much standing drinking before, but it turned out to be quite enjoyable. It’s easy to go grab more sake when you want. I recommend this place if you want to drink a lot of sake and have a good time. Thank you for the meal!

Sponsored by Kubota Sake Brewery, they have a nearly complete selection of their sakes. The remaining selection includes rare and craft sakes from various regions, making it a lot of fun to explore. The appetizers they offer pair well without overpowering the drinks, which is a nice touch.
I ordered Minase and Nishikigoi sakes. I learned that Minase is produced by Miyoshino Sake Brewery, famous for its Hanabata brand. It’s a yamahai sake, with a strong acidity that isn't overwhelming and has a slight sweetness, making it very easy to drink and quite delicious. Nishikigoi was a sake I had wanted to try for a while, and it turned out to be surprisingly mild and refreshing. For the appetizer, I had Kanazawa's local specialty, marinated mackerel, which was slightly fermented and paired well with the sake.
It was so good that I decided to purchase a bottle of Minase to take home. It seems that if you find a sake you really like, you can buy it to take away if you have the means. This place is great; I’m very satisfied. By the way, if you show your ticket to the PARCO theater, you can get a 10% discount, so definitely stop by after enjoying a show!

Having earned my sake diploma and studied sake, I can truly appreciate the precision of the recommendations. Not only does Sui have great knowledge, but his love for sake shines through. While some people still try to impose their preferences and act like connoisseurs, the essence of sake is that it’s a free-spirited drink. Sake continues to evolve and offers so much variety that I want more people to try it. If you visit here, you’re sure to fall in love with sake!

A long-awaited visit. The lineup of the prestigious Kubota sake is truly unbelievable at this price. It’s hard to believe. This is being sold by Mirai Nihon Shoten. They have over 120 kinds of sake, liqueurs, and amazake available for generous tasting. The course fee is 2,970 yen (tax included), but there is a one-hour limit. The large cellar next to the register inside the store is impressive; all the products are available for tasting. Customers can take drinks from the cellar and pour their preferred amounts into their glasses. Perhaps due to word-of-mouth on social media, most of the customers at the counter were foreigners, making it a paradise for sake lovers. Since I like Kubota, I selected it individually, and the snack options were quite reasonably priced.

I was generally satisfied with the results, but it’s not a place I would visit repeatedly.

It's always bustling with a large crowd of young people. Among them is a sleek and modern establishment, Future Japan Sake Bar, which is essentially a KUBOTA SAKE BAR. They also offer a taste evaluation service using artificial intelligence called YUMMY SAKE. However, personally, I find it difficult for AI to determine preferences. Human perception of taste and aroma isn't that simple, especially when it comes to alcohol, which goes far beyond just the five senses. I conclude that it’s best to enjoy KUBOTA purely and without overthinking it.

I went to a sake tasting place in Shibuya that has a store in Kichijoji as well. I had seen it there briefly, and was curious to check it out. However, I encountered a problem: I don't really have a favorite among Kubota's sake, and I couldn't find one that I genuinely thought was great, which made it difficult to get an accurate judgment from the AI. It was quite disappointing. Nevertheless, the selection of sake apart from Kubota was extensive, and I really enjoyed that!

Diving into a trending sake spot for the first time! At "Mirai Nihon Sake-ten & KUBOTA SAKE BAR" located in the basement of Shibuya PARCO. It seems that Asahi Shuzo from my hometown, Nagaoka, is sponsoring this place. They have an enormous noren (a traditional fabric divider) displaying "Kubota"!
Tonight's goal is to try out the "Yummy Sake" program that analyzes your sake preferences using AI. I opened the app on my smartphone and entered the provided code (I assume this code changes based on the selection of sake for tasting). While tasting ten different kinds of sake, I checked how much I liked each one on my phone, from 1 to 5 hearts.
And my Yummy Type is… "Kyun Kyun"! Kyun Kyun?! (laughs) According to the comments, it features "tropical aroma" and "the balance of isoamyl acetate with ginjo fragrance." I see! (laughs) I actually like those bold and unique types! Besides "Kyun Kyun," there are other types like… Awawa, Surusuru, Torotoro, Sharashara, Howahowa, Byunbyun, Patapata, Kurunkurun, Puripuri, Yawawawa, and Yorayura. Patapata? Kurunkurun? Byunbyun?? I wonder how these describe different types of sake! (laughs)
Once the tasting is done, the app provides the results. I was served a glass of sake that matched my "Kyun Kyun" type: "Kubota Koju." I don't think it has a very high ginjo fragrance, but that's probably relative to other Kubota options.
By the way, this "YUMMY SAKE" program (AI taste diagnosis service) along with a glass of the onomatopoeic sake that matches the diagnosis costs 2,000 yen. It’s worth trying at least once for a conversation starter! How about it? ^^
