At Tokyo Station, you can find the yakiniku restaurant "Wagyu Ittou Yakiniku Teuchi Reimen Bouka Tokyo Station Branch," located outside the north exit ticket gate in Kurobe Yokocho. Upon entering, you'll notice the restaurant is quite spacious, which is rare for this area. It's the first restaurant in Tokyo that specializes in whole-body black-haired wagyu beef. Bouka prides itself on "whole cow purchasing." They take on the risk of sourcing all parts of the cow by carefully selecting premium wagyu beef, auctioning off an entire animal, and providing a unique taste that can't be found elsewhere.
Starting in 2007 from a small 8-tatami mat shop in a back alley in Kinsicho, just two staff members initiated the journey. The first Yakiniku Kokokara opened the following year in Kinsicho. It seems to have recently opened, so I visited with a colleague.

I ordered the Premium Harami Donburi (small) and the signature cold noodles set, while my friend chose the Tokyo Rare Beef Bowl (small) and the signature cold noodles set. We placed our orders with a screen touch.
~~ Appetizers ~~
- "Salad": Shredded cabbage with a vinaigrette dressing.
- "Kimchi": Napa cabbage and cucumber kimchi.
~~ Boxed Meal ~~
- "Premium Harami Donburi": The harami, well-coated with sauce, was grilled to perfection. It had the bold texture of lean meat, juicy and tender. The rice had nori on top and paired perfectly with the fluffy rice.
- My friend's "Tokyo Rare Beef Bowl" featured rare grilled meat topped with a sweet and spicy sauce and an egg yolk, offering a sukiyaki-like flavor.
~~ Noodles ~~
- "Morioka Handmade Cold Noodles (small)": These noodles had a chewy texture and were a bit firm. The toppings included apple, chashu (braised pork), and a boiled egg, with a refreshing soup. They provided vinegar and a small dish of cabbage kimchi for flavor variations.
According to the explanation, the restaurant has a specially designed noodle-making machine in the kitchen to produce the cold noodles with a secret blend of ratios and processes that ensure the soup and kimchi combine perfectly. They patiently simmer several ingredients, including domestic wagyu and jidori (free-range chicken), for about 8 hours. They also put effort into the water used, using two types of electrolyzed water to create a smooth taste that is otherwise hard to achieve.

- "Grapefruit Jelly": A refreshing citrus jelly, providing a light finish.
For the cold noodles, they use special kimchi that is pickled exclusively for these noodles, demonstrating their attention to detail. The staff were also energetic and greeted us with bright smiles.
