Visited on a weekday evening. It's better to make a reservation since it's a small place and it seemed to be fully booked.
- **Harami Sashimi (¥2800)**: The harami was beautifully arranged on the plate, similar in size to what you would grill, with about 10 slices. It was topped with an egg yolk and plenty of chopped green onions. The melt-in-your-mouth deliciousness is luxurious! It feels even better than yukke in terms of eating raw meat—it’s just amazing.
- **Black Tongue (¥3800)**: I felt this was even more tender than the aged version I had before. It came with six slices, and I enjoyed it with lemon and salt.
- **Braised Beef Tendon (¥700)**: This is a must-order. The meat is chunky, incredibly tender, and delicious. Most people seem to order this.
- **Grilled Beef Tongue with Saikyo Miso**: It came with four pieces. The flavor of the saikyo miso complements the beef tongue well. It feels close to how you eat beef tongue with miso.
- **Grilled Shiitake Mushroom**: These were huge shiitake mushrooms, simply prepared with minimal grill marks and lightly drizzled with soy sauce.

The beer glasses here are ice-cold, which is fantastic (laughs). My impression from the previous visit is that they often run out of sake. Thank you for the meal!

It's a small restaurant with a counter and one table. The menu isn't extensive, but every dish is thoughtfully prepared with care. The thick-sliced aged beef tongue is incredibly tender despite its thickness, allowing you to fully savor the rich flavor of the tongue. When you dip it in the plum sauce from the jar, it brings a refreshing taste that makes you want to eat even more. Other dishes like the thick fried tofu and the raw skirt steak are also delicious, and the Niigata Koshihikari rice (I didn't take a picture, but) was gone in no time. If you visit Ginza, I highly recommend this place!

There is a transparent partition at the grilling area, but unfortunately, the smoke still reaches the dining counter and can cause eye irritation, which is a bit disappointing. I ordered the raw beef tongue (three thick slices) and the aged tongue rice set (which includes rice, shijimi clam soup, and pickles). The beef tongue was aged for one week, and both types were grilled over charcoal, focusing on the tenderest parts.
The recommended toppings were Kan'yonyama lemons from Wakayama Prefecture, original salt blend, Kujo green onion sauce, and plum sauce. The beef tongue was grilled to a fragrant crisp over charcoal, and with each bite, the juiciness and umami flavors lingered, making it delicious. Enjoying it with the plum sauce added a refreshing touch, while piling on the Kujo green onion sauce intensified the flavor even more. I truly savored the deliciousness of the beef tongue. Since it’s a specialty shop, I would have liked to see a bit more variety on the menu, and I noticed a limited selection for drinks, with no wine or sake available, which felt restrictive. I finally visited "Ginza Gyutan Shiraishi," which opened in March this year and had been on my mind for a while! I ordered ◾️ Grilled Beef Tongue (Large) (¥2,600) and ◾️ Yukhoe Sashimi (¥2,250). The beef tongue they grilled right in front of me was thick and delicious, and I enjoyed the yukhoe as well. The beer was so cold that it was almost frozen, which made me laugh. I thought they only had beef tongue, but to my surprise, the menu was quite extensive. They are open until 5:00 PM, so it seems like a great spot for after-work visits!

I had various thoughts, but the bottom line is that the food was delicious. The braised beef tongue was really good. The thick-cut tongue was fine, I guess. I also had two types of grilled vegetables, king oyster mushrooms and Manganji peppers. Well... What should I eat it with? It would have been better if there had been a little more explanation on that. As for the floor staff, I think they were probably in their first or second day. I felt they should have been told first about basic things like not standing with their hands behind their back and holding glasses from the lower part rather than the middle when serving. Is this a typical characteristic of a restaurant confident in its ingredients? The meat was indeed delicious.

The beef tongue was, of course, delicious, and I was able to choose my favorite vegetables, which was great. The yukke was especially amazing! I could eat it forever. You can choose between thick or thin slices of beef tongue, and they cook it right in front of you, adding to the lively atmosphere. The sashimi, like yukke, is exceptionally fresh and makes for a perfect drinking snack. Then there's the limited boiled tongue, which is so tender that it can be cut with chopsticks. Beneath the boiled tongue, there's simmered thick fried tofu that pairs wonderfully with the tongue. Additionally, the selection of snacks and appetizers is impressive, which is a nice bonus.
