Chilled Creamy Shrimp Soba 1150 yen, Red Snow Crab Miso Tamago 500 yen, Total 1650 yen. 1. Chilled Creamy Shrimp Soba. I had already decided my order from the shop's Twitter announcement. The super rich chilled shrimp broth is incredibly delicious with its concentrated umami flavor. 2. Red Snow Crab Miso Tamago. It was my first time trying crab miso for the side dish. I visited the restaurant during lunchtime. Arrived before 12 o'clock, there were 10 people waiting outside. There were also 5 groups waiting inside, and it took about 30 minutes before we were seated. This shop is said to have separated from the Pukan group. Inside the restaurant, there are 4 counter seats and 2 tables for 4 people each. There are no partitions between the counter seats, and the seating space is spacious. The atmosphere is dim and rugged, but the pleasant aroma of dried fish fills the air. This time, I ordered the "Large Pure Dried Fish Ramen for 1100 yen". The bowl arrived in about 2 minutes. When I tasted the soup with silver scales floating on top, the pure flavor of dried fish spread throughout my mouth. It's 100% dried fish, but there is no bitterness, and the overflowing umami is balanced with a hint of bitterness. It reminded me of the familiar taste of "pure dried fish" that I discovered when I lived in the Kanto region. The straight thin noodles were cooked to the right firmness, with a good chewiness typical of low hydration noodles. Personally, I might have preferred them a bit firmer. The wheat flavor is very rich. The toppings included rare pork shoulder, sprouts, and chopped green onions. The rare pork shoulder had a moist texture, and with each bite, the meat's umami flavor oozed out nicely. As a shop that has separated from the Pukan group, it offers a dried fish ramen that evokes the Kanto region. For those who, like me, feel a bit unsatisfied with Kansai-style dried fish ramen, this place is worth recommending. Thank you for the meal!

This time, I visited the Fish Noodle Garden in Fuse. Lately, I've been enjoying their daily special noodles with seafood, but their classic dish is the pure dried fish ramen. Known as "cement," the grayish, sharp dried fish broth is truly delicious, and I had it again after a long time. When the bowl arrived, the familiar, comforting colors put me at ease. The firm noodles paired with the sharp dried fish broth were exquisite. It was delicious as always. I also ordered the reliable and satisfying mixed topping noodles. This time, I chose the miso-flavored red snow crab topping. After mixing it well, I took the first bite. Delicious! The miso from the red snow crab was rich, but the flavor was soft and gently enveloped the noodles. It was irresistible. I finished it quickly and was completely satisfied. Wednesday 17:40. 1 person waiting outside. The store opened at 17:50. I ordered the Compressed Light Bonito Ramen (hot) for ¥1000 and the Black Abalone Liver Ball for ¥500. The bonito ramen soup is described as light, but I think it refers to the concentration. The broth here is light in terms of concentration, with a slightly bitter and umami taste, rather than a clear and refreshing flavor. The saltiness is moderate. The thin noodles had a dry texture that bounced off the soup, maintaining a good state without getting soggy even after some time. Quite delicious. The seaweed topping had a nice aroma, the onions were average, and the chashu was moist and juicy, resembling ham. The noodles for the Abalone Liver Ball were dry but tasty, and the generous amount of liver topping added a strong and unique aroma, enhancing the overall flavor. The seating area is simple with only 10 seats, and the turnover seems quick due to the efficient work of the owner and the thin noodles.

Order: Cold sea bream white broth soba with grilled quail seasoned egg topping, and bara nori rice. This famous shop in Fuse had about 8 people waiting in line even though I arrived about 15 minutes before opening. I couldn't get a seat on my first try, but I was able to wait comfortably in the waiting area inside the shop. The soup of this shop's cold ramen goes beyond creamy to being like cream itself. When you eat the thin noodles with the creamy soup packed with sea bream umami...it's incredibly delicious! The rich seafood flavor, al dente noodles, and the aroma of shiso leaves and kaiware create a unique trio that I have never experienced in other shops. The quail seasoned egg topping shows their dedication to quality. The bara nori rice, although simple enough to make at home, has a distinct seaweed aroma and a different texture. Seriously delicious. The service is polite and there are almost no downsides, but be aware that the shop has short opening hours and the wait can be tough!

This time, I visited Uogomenen in Fussa. It is known for its delicious boiled fish ramen, but they also offer exquisite fish-based noodles that showcase the skills of the chef. I tried their limited edition dish of the day, "Cold noodles with dried bonito flakes and boiled fish broth." As soon as I took the first bite, I was impressed by the rich and flavorful dipping broth, enhanced by the aroma and umami of dried bonito flakes and boiled fish. The texture of the noodles was perfect, and the chashu pork was moist and perfectly complemented the broth. I also couldn't resist ordering the "Black abalone liver mixed noodles" as a side dish, and it was equally delicious. The soft and flavorful liver made it a superb dish. This is Fish Fish Noodle Garden. In Higashi Osaka, Fuse, it's a fierce ramen battleground here too. It's 11:10 AM and there's already a line of about 10 people in front of the store. It looks like we won't be able to get a seat on the first round. I line up at the end, and the line keeps growing, more than double the number of people. The store opens at 11:30 AM, so I buy a meal ticket from the vending machine and wait in the waiting room at the back. This time, the menu is a limited edition, chilled creamy crab soba. I also added a grilled quail egg as a topping. The cold, thick soup with the umami of the crab is delicious. The thin noodles, thoroughly rinsed with water, go well with the cold, thick soup. The texture of the white leeks is good, and the aroma of the large leaves is nice. The grilled quail egg topping is fragrant and delicious. The rare char siu is tender. Squeezing lemon on top, citrus goes well with the chilled dish. After finishing the noodles, another pleasure awaits: Oyster Mixed Tamago. I ordered it with less noodles, and added a rich raw egg as a topping. Mixing the oyster paste with fish powder, chopped onions, kaiware, and raw egg, the rich flavor of the oyster is delicious. Combining it with the chilled creamy crab soup, it becomes slightly milder and delicious once again. It was a double pleasure with a cold dish and a rich dish.

The nearest ramen shop to Fuse Station. I walked from Kozu Station on the Osaka Metro. I arrived at 11:45 on Saturday. There were 8 people waiting outside the shop. I lined up. It's a scorching hot day, but thankfully there's shade. I entered the shop at 12:15. I bought a meal ticket. There were 5 groups waiting inside. I chose the White Sea Bream Ramen for 1000 yen. I was seated at 12:25. There are 4 counter seats and 2 tables for 4 people. The ramen arrived quickly. The soup is milky white, slightly brown. When I tasted it, it was like sea bream itself. Rich, fragrant. The chopped large leaf and seaweed add a nice touch, refreshing. The chashu is two large slices, soft, with a subtle flavor that complements the main soup. It also has onions, providing a crispy texture. The noodles are medium thick, straight noodles. They have a good chewiness, satisfying to eat. This ramen is very delicious, with a soup that tastes like sea bream.

This is Fish Fish Menen, located in Fuse, Higashi Osaka. On a day off, I arrived at 11:10 am and there were 4 people in line in front of the shop. I was the 5th in line, so I could be seated shortly after opening. However, just 5 minutes later, there were more than 10 people in line behind me. If I had been 5 minutes later, I would have had to wait quite a bit. After opening, I was seated. This time, I tried the limited edition dish - Cold Creamy Soba with Hairy Crab, topped with Quail Egg. The cold creamy soup with hairy crab was delicious, with a rich crab flavor in a creamy cold soup. The thin noodles were cooked perfectly and the cold creamy crab soup coated them well, making it delicious. The texture of white leeks and the aroma of large leaves were also good. The quail egg topping was nicely salted and had a pleasant crunch. Squeezing lemon over it added a refreshing touch. The thinly sliced rare chashu was tender and tasty. Another enjoyable aspect at Fish Fish Menen is the "Waedama" - a half-size serving of Black Abalone Liver. It consisted of black abalone paste, fish powder, shredded seaweed, chopped green onions, kaiware radish sprouts, and flaked fish, mixed with a rich raw egg. It was quite rich in flavor, but slightly milder. Lastly, I poured in the cold creamy crab soup, mixed it with the black abalone paste, and enjoyed the mild and delicious combination. It was a bowl of cold, delicious goodness that was enjoyable twice in one meal.

I was aiming for the limited creamy crab soba, but it was sold out, so I ordered the limited creamy dipping noodles with urume bonito flakes and dried sardines instead. I chose crab miso for the half portion of the toppings! The dipping noodles were also delicious. The combination of urume bonito flakes and dried sardines had a strong yet smooth flavor. The coldness of the dried sardines can sometimes bring out a bitterness, but the umami flavor was solid. The noodles were firm and had a good chewiness. It was excellent.

First visit, arrived at 10:50 for the 11:30 am opening on Wednesday. There were about 8 people lined up, and I was third in line. I ordered the Urume and dried fish cold creamy tsukemen for 1200 yen, and the Red Snow Crab miso tamago for 500 yen, with an additional rich egg topping for 100 yen, totaling 1800 yen. The Red Snow Crab miso tamago can only be ordered as a set with another type of noodles. It is a mixed noodle dish with various toppings like black abalone, shrimp, oysters, and shishamo. You can also opt for a smaller portion for 50 yen less. The Urume and dried fish cold creamy tsukemen had a unique dipping sauce with a chewy texture that coated the noodles well. The aroma of Urume and dried fish was strong and delicious. After finishing the Red Snow Crab miso tamago tsukemen, I placed another order. The paste of crab miso was mixed with a raw egg, making it even more delicious as recommended. The flavor of the crab miso was rich and I couldn't stop eating. Despite the generous portion, I was able to finish it easily. Overall, this restaurant specializes in seafood and offers a variety of unique flavors to enjoy. I highly recommend trying it with the mixed noodles! It was a truly innovative and one-of-a-kind dining experience.

This time, I visited Uogashi Menen in Fuse. They offer a unique seafood soup specialty, and the highlight of this visit was the cold rich yellowtail broth. It's perfect for the hot and humid rainy season. I also ordered a bottle of beer (Akahoshi) and enjoyed it while waiting for my dish. The gelatinous soup with a strong yellowtail flavor clings well to the noodles. The steamed convection-cooked chashu is moist and delicious. I also ordered their signature dish, the chilled shishamo herring mixed noodles, which were colorful and flavorful with a perfect saltiness. Everything was delicious and satisfying. I went to a famous restaurant near Fuse Station! It was super crowded but I managed to wait in line. Fuse's former chef opened a new shop called "Uoumen En" on March 3, 2021. I ordered the summer limited edition "Chilled Creamy Soba with Migratory Crab" that I had decided on after seeing it on Twitter. The cold and creamy soup is filled with crab. The strong crab soup balances out the negative aspects, and the straight noodles are firm and chewy. It was delicious! But the line was really long~
