When did it happen! A ramen shop opened in Mikasa. It seems to have opened in the space left by "Tsubohachi". The name is "Soh". I wonder if it's the same "Soh" that was always closed whenever I went, located down the street from Mikasa JA. There probably isn't a parking lot, considering it's after "Tsubohachi". The menu includes chicken white broth, soy sauce, salt, white miso, and tantanmen. I'll start with soy sauce. The bowl is small... no, elegant in size. First, the aroma... yes, it's chicken. Oh! A hint of ginger... but I don't smell soy sauce. I take a sip of the soup, and the rich flavor of chicken spreads. It's creamy, but it lingers on the tongue a bit. I still don't sense the soy sauce flavor. Where did the ginger scent that I first noticed go? Maybe I was mistaken. The noodles are medium-thick curly noodles from Nishiyama, cooked well. The chashu is made by boiling and then searing chicken. It's quite thin. There was sansho pepper on the table, so I sprinkle some on... hmm, black pepper would have been better. It's a pretty tasty ramen, but some might find it "heavy". It would be nice to have yuzu zest floating on top, or at least sprinkle some grated lemon zest. I heard from the staff that it was indeed "Soh" that moved here.

I came here after seeing it featured on a YouTube show. When I arrived right after the opening, there was already one customer inside. More customers came in after me. There was only one staff member, who seemed to be the manager, handling everything from the kitchen to the dining area and cashier. Despite being very busy, the service was surprisingly fast, and I was able to enjoy my meal in about 10 minutes. I tried the salt ramen, and the soup was incredibly rich and had a unique flavor I had never tasted before. It was salty, but also had a creamy texture like tonkotsu or maybe like when you add egg to something. It's one of the top 3 salt ramen I've ever had. It was really delicious. The soup clung well to the noodles, and I ended up drinking all of it. The chicken chashu was tender and tasty. The only thing that bothered me a bit was that the salt ramen I had came with 3 pieces of chicken chashu, while the "spicy miso" and "tantanmen" ramen that my friend ordered only had 1 piece. I wonder if that's just how it's supposed to be. I live in Sapporo, but I want to come back to Mimasaka to try a different flavor. The ramen was so delicious and had a taste that left a strong impression on me. Thank you for the meal.

Visited a new restaurant on November 13th, my 124th visit this year. After eating soba and even bread, I decided to check out a place that caught my eye. I traveled from Iwamizawa to Mikasa. By the time I arrived, my stomach was feeling just right (laughs). However, I couldn't find the parking lot at first. Let's go explore! It's a noodle shop called "Soushinten." There were two customers ahead of me, dining separately. I'm curious to see what kind of ramen they serve. As I watched the cooking process, out came a handheld blender! So that's how they do it (laughs). Not really my favorite style... And there it was, the ramen served. As expected, it's a foamy one. The soup is cloudy white. Let's dig in. Oh, the taste is just as I expected. And not in a good way. That's all for now.
