During a visit home from Fukui, Ishi N-san organized a Tetsushi gathering with the entire restaurant reserved for a grand feast with 15 people. The food and drinks included:
- Appetizers
- Salad (daikon, spring onion, sunny lettuce, homemade potato chips)
- Chicken wing tempura
- Mita pork chashu
- Pork tempura
- Jajang tofu
- Toro rolled in leek
- Garlic chives and liver
- Oyster mapo tofu
- Cream cheese crackers
- Tender pork cartilage stew
- Snow peas
- Stir-fried spring cabbage and red pepper mapo
- Wafu shoyu x2
- Heartland beer
- Highball
Each person paid separately, and my bill was ¥9300.
The Chinese-inspired creative dishes were all incredibly delicious, focusing more on stamina than healthiness. The oyster mapo tofu was outstanding. The ramen at the end was so delicious that I had two servings. The Wafu shoyu ramen had a soup base of chicken and seafood, with added fish broth and chicken oil. It was undeniably "Japanese-style" as described, but in my drunken state, I could only respond with "The lard's crispy flavor is amazing!" even though there was supposedly no pork in it. The chicken oil was incredibly flavorful. Despite my inability to analyze the flavors properly, it was undeniably delicious.
The homemade noodles, about 1.5mm square cross-section straight thin noodles, had a satisfying chewiness and a fragrant wheat flavor that paired perfectly with the soup. The subtle flavors of the soup and noodles complemented each other beautifully. The chashu, menma, nori, and white leeks were all top-notch. The thin and rich menma also matched perfectly, making it an extremely delicious dish that I would enjoy even when sober.
