On Sunday at 1:00 PM, I went to "Joto Rekka" for the first time in a long time. When I come to this place, there is only one choice for me - "Noko Tsukemen (920 yen)". It arrived 8 minutes later. I took a bite. Delicious! The broth with the rich flavor of kombu and salt is a unique and delicious combination that you can't find anywhere else. The homemade noodles are chewy and smooth. It came with white onions, bamboo shoots, and two slices of chashu. Personally, the "Noko Tsukemen" is my favorite dish at "Rekka". Unfortunately, the Panante Temmaibashi branch where I usually go doesn't have a tsukemen menu, so I can only eat it at this branch or at the main store in Shonai. After finishing the noodles, I had the soup refilled. I added yuzu peel and took a sip. Delicious! I can't help but order the soup refill because it's so good, especially the last sip of the soup is amazing. If there was soup like this, I would want to drink it every day. I would even carry it around in a water bottle. It was great to have the "Noko Tsukemen" after a long time! Thank you for the meal.

I had the "Hippare Mix Soba" and one piece of "Gori Kara" at this restaurant. The Hippare Mix Soba is a mixed soba dish with canned mackerel, natto, spicy miso, seaweed, white leek, chashu, and egg yolk. You mix it all together and eat it. I like that you can adjust the amount of spicy miso to your liking since it's not too watery. I'm not a fan of spicy food, so I don't mix in all of the spicy miso. The noodles in the "Ryuko" dish are chewy and delicious. It's a unique and tasty dish that I crave occasionally. It comes with rice at the end, so I mix the remaining ingredients with the rice. The "Gori Kara" is a deep-fried chicken piece that you can order for 150 yen each, which is convenient when you just want a small side dish. It tastes great, but the only downside is that the chairs are a bit wobbly.

I found this shop when I was looking for a place to park my car and grab something to eat while working in Osaka. There was no line around 12:30 on a weekday. The menu mentioned that their mixed noodles are famous, but I decided to try the Yamagata-style ramen because it looked delicious. However, they were sold out of it, so I ended up getting the mixed noodles. It had natto, mackerel, and spicy miso mixed in, and they recommended mixing it all together before eating. It tasted pretty average, but the spicy miso added a nice kick. I think it would taste even better if you ask for it to be extra spicy. I finished the noodles and mixed in the rice, but it wasn't anything special.

In Pumigaoka 4-chome, there are many ramen shops. The "Raging Fire Mixed Noodles" (soupless with rice) allows you to choose the spiciness level on a scale of 1 to 10, and level 3 is quite spicy. It is an evolved version of Yamagata's local dish "Hippal Udon," served as mixed noodles. Pouring plum vinegar generously over it, it's delicious to eat while sweating.

When I went out to Kyobashi, I searched for a nearby ramen shop for a late lunch and discovered an unknown menu item called "Hippari mixed soba" at Rekka. Before visiting, I was planning to challenge myself with an unknown menu item, but when I looked at the menu at the entrance again, I found a sign that said "Yamagata local ramen Tori Chuka." I wanted to experience Yamagata, which I had never been to, so I decided to change my plan and go here. I felt a little hungry, so it felt a bit long until the ramen arrived, but it finally came. In the center of the bowl was chicken surrounded by green onions, chopped seaweed, and mitsuba. And a separate plate of spicy miso was also provided. The soup had a sweet soy sauce flavor that seemed to have been simmered with vegetables, and it was light and easy to eat. The spicy miso on the separate plate was mixed with the soup on the spoon and eaten, but personally, I preferred the soup as it was, so I didn't use it anymore. This time, I succumbed to temptation, but next time, I would like to challenge the "Hippari mixed soba." Thank you for the meal.

I was able to enter the restaurant quickly as it was past the Saturday lunch peak! Last time I had the mixed noodles, so this time I tried the chicken ramen and egg rice bowl. This is the Sanshi Musou Rekka Fire City Higashi branch!! I visited in the evening just before 7pm after work. It was my first time here, and there were no other guests. I bought a meal ticket from the machine and took a seat. Soon, more customers arrived, and I noticed they accept card and PayPay payments. This time, I tried the Yamagata Spicy Miso Ramen with an added flavored egg. The miso soup was slightly sweet and rich, with a hint of seaweed flavor. The homemade wavy medium-thick noodles paired well with the miso soup. The plentiful bamboo shoots were crunchy, and the texture of the white leeks was great. The flavored egg was deliciously runny, and the fatty and tender chashu pork was a highlight. I also enjoyed gradually adding the spicy red miso soup to my ramen, which had a nice kick from red pepper and garlic. Mixing it all together at the end was another tasty experience. Overall, it was a bowl of ramen that was delicious in multiple ways!

The location is near Kamio Yonchome Station on the Osaka Metro Tsurumi-Ryokuchi Line. The sign outside says "Yamagata Ramen" ... Yamagata Ramen in Osaka. Sounds good, right? When you enter, there is a ticket machine. They offer various options like Hikarimaze soba, Rekka Hikarimaze soba, Tori Chuka, Spicy Miso Ramen (miso, soy sauce), Rekka Ramen, Chuka Soba, Four Kinds of Seafood Shoyu Ramen, Noko Ramen, Rekka Tsukemen, Noko Tsukemen, Chuka Tsukemen, Cold Meat Soba, and more. I was curious about Yamagata's local ramen dishes like Yamagata Tori Chuka and Yamagata Spicy Miso Ramen. They also have a variety of toppings, rice, mini katsudon, gyoza, karaage, etc. On the table, there are condiments like E-chan's Ume Konbu Vinegar, black pepper, gyoza sauce, chili oil, tamago kake gohan sauce, and more for flavoring the ramen. The interior has a counter with 10 seats and 4 table seats. It is run by two men and two women. The background music is Japanese music. I ordered the "Yamagata Hikarimaze Soba" (920 yen). Mixing before eating adds an extra touch that stimulates the appetite. The warm aroma of the sauce at the bottom when mixed is delightful. The taste of mackerel, spicy miso ball, and the sliminess of natto complement each other very well. Natto goes surprisingly well with ramen. Midway through eating, I added Ume Konbu Vinegar for a tangy and flavorful kick. It was delicious and refreshing. It's like getting two delicious experiences in one bowl. The amount of rice in the small bowl is just right. I mixed the leftover ingredients and rice and added Ume Konbu Vinegar once more. It was delicious and refreshing, leaving a satisfying aftertaste. It's like enjoying two delicious experiences in one meal. The customers around me seemed to be ordering Rekka Ramen, Cold Meat Soba, and Hikarimaze Soba. I discovered a new ramen dish. As soon as I entered, they asked if I had a soba allergy, to which I replied no. I asked for recommendations and they mentioned that in Yamagata they have Yamagata Spicy Soy Sauce Ramen, but in Osaka they often serve Yamagata Spicy Miso Ramen. I ended up ordering the Spicy Miso Ramen, which turned out to be a great choice. The soup had a rich and flavorful broth with spicy miso mixed in, giving it a unique taste. One of the lesser-known ramen shops in Yamagata is "Rekka," which is very famous in Osaka. I once visited a tiny shop in Toyonaka for a location shoot. The menu has a wide variety of options, making it hard to decide what to eat. However, feeling a bit hungover, I opted for the simple Chuka Soba for 770 yen. The chewy noodles in the rich soup, with plenty of green onions, made me very happy. The Southern All Stars' background music also added to the pleasant atmosphere. I must go back to try their meat soba! They still have my signed board displayed, which I am truly grateful for.

I enjoyed the spicy miso ramen, the miso flavor was delicious. The flat curly noodles paired well with the spicy miso. The chashu had a slight porky taste. I remember having spicy ramen before with thick noodles that I didn't like much, but the curly noodles were a good match for the miso. I will come back again.

Today's lunchtime was in the vicinity of Kabu yoncho-me. It looked like a fierce ramen battleground, but surprisingly didn't hit on Tabelog. So, I did some foot research. I found a sign for "Yamagata Ramen" relatively close to the intersection. Intrigued by the "Yamagata Hikarimazesoba" for 920 yen, I entered the restaurant. First, temperature check, then to the ticket machine. Since it was before noon, there weren't many customers, so I sat at the counter. After a while, the dish arrived. On top of the noodles were chopped green onions and chopped seaweed. In the center was a raw egg yolk. Next to it, small slices of chashu were modestly hidden. And there were three small clumps arranged like potato salad. One was chopped natto, one was mackerel, and the remaining one was spicy miso. These were mixed well before eating. It had a unique sticky texture, slightly stringy. Is this the "hikari" part? Definitely a menu to avoid for those who dislike natto. The flavor was strong, with a moderate spiciness, so I finished it in one go. There was also plum vinegar for flavor change, so it was best to add it while the noodles were still there. And the final treat was the free dive rice that came with it. I added it and mixed it in. The sticky dive rice was also quite good. Grateful for a healthy body today as well.

After work, I used a shared rental bicycle in Kyobashi and went to this shop. It was around 21:35 and the place was about half full. I asked for a recommendation and they said the mixed soba is their specialty, but it has natto and other things in it so I decided to go with the Yamagata spicy miso ramen for 880 yen in cash. I sat at the counter in the middle and my order arrived in about 4 minutes. At first, I tried the soup without mixing in the spicy miso and it was already quite delicious, living up to its reputation as a former Michelin Bib Gourmand. When I mixed in the spicy miso... I'm not sure how to describe it. Isn't it much better not mixed in? Do you really need this spiciness? It would have been better to just drink it all up without mixing it. The noodles were medium curly noodles, nothing special. The chashu was average, and the green onions were okay. Time to head back home.

I visited Rekka Joto-ten for the first time near the Tobu Shichome Station, which received the highest score in the area. I arrived at 11:30, half an hour after the 11:00 opening time, and I was the 7th customer in line. I ordered the rich Kon-tsukemen and the Yamagata spicy miso ramen. The Kon-tsukemen came with a hot stone bowl filled with a hot konbu dipping sauce, along with 250g of medium-thick noodles. The noodles quickly heated up in the boiling hot stone bowl, allowing me to enjoy them at the perfect temperature. The flavor of the konbu dipping sauce was straightforward and delicious, and I could also enjoy some flavor variations with yuzu and umeboshi vinegar on the side. The Yamagata spicy miso ramen allowed me to choose between miso and shoyu flavors, and I chose miso. While I wished there was more red miso and nori flakes, the overall taste was still enjoyable. I look forward to trying the Tori Chuka soba, another Yamagata specialty, on my next visit.
