On Sunday at 1:00 PM, I went to "Betty Sankyuu Chinese Soba Sui" in Fukushima. I was half expecting it to be closed or have a long line, but when I arrived, there were only three people waiting. I decided to join the line at the end. After 15 minutes of waiting with no movement, finally, 20 minutes later, we were let into the restaurant. All three of us who were waiting entered at the same time. I was torn between the basic white soy sauce "Fukushima Kitakata" or the boiled fish soy sauce "Yamagata Sakata", but there was a special limited menu on the side. I wanted a rich ramen today, so I ordered the limited "Black Fukushima Kitakata (900 yen)" from the Chinese soba section. I paid in advance. The owner of "Sankyuu" was running the place alone. Ah, that's why it takes so long. It arrived in 13 minutes. One bite. Delicious! Despite the dark appearance, the soup had a rich umami flavor that was easy to drink. The lightly sprinkled black pepper was a nice touch. They use soy sauce from Tatsuno, Hyogo Prefecture. The charred pork belly chashu, white leeks, seaweed, and menma were served with the noodles, which were hand-kneaded flat noodles. They had a good chewiness and a strong wheat flavor. The thick, thin noodles resembled wonton wrappers. "Sankyuu" is already a famous restaurant, but this branch is also excellent. Thank you for the meal.

I visited the store just before it opened and waited a bit before entering. The interior of the store consists of only a long counter seat. I sat at the counter seat at the back and ordered the limited "Clam Dashi Fukushimakitakata" (1,000 yen). I paid at that time and waited for my bowl. The bowl was topped with nori, chashu, wonton, menma, naruto, and chopped green onions. When I tried the soup, the flavor of the clam spread in my mouth, with the gentle acidity of white soy sauce and exquisite saltiness enhancing the umami. The noodles were curly thick noodles with a smooth texture and strong chewiness, allowing me to fully enjoy the deliciousness of the noodles and their excellent compatibility with the soup. This was my first visit to this restaurant, and I was impressed by the delicious ramen, with its excellent harmony of soup flavor, noodles, and ingredients.

A popular branch of a famous restaurant in the Fukushima area. It was my first time visiting. The main menu is based on soy sauce, but I decided to try something with a delicious-sounding name. It was truly a forbidden taste of indulgence. The chewy tripe and pork belly simmered in a spicy soup, with thick noodles that I devoured. It was a menu that provided the ultimate stamina recovery. The feeling after eating was like the refreshing sensation after a sauna. Truly deserving of being a top 100 restaurant. Thank you for the meal.

Before starting the night shift, I went to JR Shin-Fukushima Station and walked south. I first went to this TOP5000-ranked shop. I arrived around 18:35 and had to wait for a table. I was worried for a moment because it seemed like they were out of ingredients and were closing (it was written on a sign outside, but according to the information on Tabelog, they should have been open continuously). Luckily, they opened just in time and I sat at a counter seat towards the back. I ordered their recommended Chinese soba "Fukushima Kitakata" and paid 800 yen in advance. The food was served in about 10 minutes. The soup tasted like soy sauce and was quite flavorful and delicious. The noodles were decent, with a slightly flat and crimped texture. The chashu was average, the wontons were okay, and the green onions were also decent. Now, I was thinking of going to the main dessert shop, one of the top 100 in the area, but when I walked north, it was closed. It said they closed at 18:00, even though on Tabelog it said they were open until 20:00. I guess I have to request another update. I'll go to a convenience store instead.

Personally, I find it more delicious than the main branch. There are several types available, but the classic is the Kitakata ramen. The white soy sauce base has a sweet flavor, and the noodles are thick and flat, providing a satisfying texture. The chef seems to have a strong personality, but provided attentive service. Ordered the white soy sauce ramen and the dried baby sardine rice with mountain pepper. The light soup made with white dashi was easy to drink. However, the pork was not very tasty due to the excessive fat. The noodles were average. As for the dried baby sardine rice, the rice itself was not good and it was difficult to eat. The portion size was decent, maybe a little too much for a regular serving. Based on this experience, I'm not sure if the other ramen flavors are good, so I'm hesitant to go back.

On a regular day, I went to a branch of Sanku, a chain of restaurants around Fukushima, for the first time. I usually love the udon at Sanku, so I decided to try their ramen this time. I ordered the Kitakata ramen, which was clear and delicious, with plenty of char siu at a great price. The ramen had medium-thick curly noodles and the overall taste was well-balanced and high quality. I also ordered the Moon-Viewing Kitakata ramen, which looked delicious in the photo, and the Dried Fish and Sansho Pepper Rice, both of which were visually appealing and tasty. Breaking the egg in the ramen changes the flavor of the soup, so timing is key. Mixing the egg with the noodles enhances the taste, but be careful as it can overpower the soup. The Dried Fish and Sansho Pepper Rice was also delicious when mixed with the egg. Overall, Sanku never disappoints with their tasty dishes.

I have visited this shop several times, which changes its noodle concept regularly. For about a year now, they have been mainly serving Kitakata-style ramen. This time, I tried the Kitakata-style ramen with added meat in a dried fish soy sauce broth. It was a very refined dried fish ramen. The noodles were hand-kneaded with a high water content, giving them a chewy texture that paired well with the soup. I would like to try it with low water content thin noodles as well. The broth was very elegant and light, yet packed with flavor. I definitely want to go back again.

【Satisfying Fukushimakita Kata Ramen】 On Mondays at 11:35, I got the pole position! They were supposed to open at 39 minutes past the hour, but the door didn't open haha. It opened exactly at 12:00, so maybe they changed their opening time? The owner didn't say sorry when opening the shutter, so it seems like they probably changed it. If that's the case, I wish they would at least update the sign in front of the store... The online information is fine, but still. At 12:00, there were about 10 people waiting outside, and when I left the store at 12:20, there were 5 people waiting outside. - Fukushima Moon-viewing Kita Kata Ramen for ¥900 It's a pre-payment system, so you pay right after ordering. They take everyone's orders at once when they open, so it takes about 5 minutes to prepare the food. The owner speaks casually, not in a typical customer service manner. It's more like the familiar casual tone of an uncle you see once a year. Some people might have mixed feelings about it, though. Here it is! It looks beautiful... The high water content makes the noodles chewy and thick, so you can really taste the noodles. The soup has a gentle umami flavor of white soy sauce and a sweetness like mirin? I went to the restaurant "Bettei Mikado Chuka Soba Sui" after a long time. Previously, they served tonkotsu ramen, but now they serve Kitakata ramen. I had the "Fukushima Ramen" with white soy sauce, which was light and delicious. The soup was tasty, and the hand-kneaded flat noodles were a good match. I rarely eat ramen. However, while wandering around Fukushima, I often saw a ramen shop called "Miku" with a long line. I don't usually wait in line to eat, but this place was empty so I decided to give it a try. Perhaps it's the second branch. Come to think of it, there is also a second branch of the popular Porchini bakery around Amidaike Street where you can buy salt bread and cream bread without waiting in line. Oh, and there's also "551" on the street, and there are many delicious shops here. By the way, the ramen here is fish-based, I didn't know that when I entered, but it was delicious. I actually wanted to eat a rich and heavy ramen since it's been a while, but the noodles were really good, very tasty. And the chef was very nice and considerate, which made the experience pleasant. I thought I'd come back again.

Ramen restaurant located in Fukushima, a sister shop of Resshi Emoi Ramen Koubou Miku. Visited for the first time last year at the end of December, on a weekday night after 8 pm. The place was almost full with around 6-7 customers. There are only 9 seats at the counter. I ordered the limited rare menu, clam broth with rib meat ramen. The rib meat piled on top of the noodles was large and the char siu was tender and delicious. The ramen was packed with pork char siu and beef belly, making it a meat lover's dream. The soup was flavorful with clam broth, rich but light with a perfect match with the beef char siu. The noodles were hand-kneaded flat curly noodles that absorbed the clam broth soup well and had a good texture that didn't lose to the char siu. This ramen shop mainly serves Kitakata ramen and it was so delicious that I want to visit again.

Ranked in the top 5000 on Tabelog with an overall rating of 3.68. Visit date: Thursday, December 29, 2022, 18:45. Ordered the limited "Clam Dashi Kitakata Chuka Soba" for 1,000 yen and the "Kitakata Fukushima Chuka Soba" for 800 yen. Arrived at the restaurant at 18:39 and had to wait for 30 minutes before being seated. Originally planned to order the "Yamagata Sakata Shoyu Ramen" but it was sold out, so changed to the "Fukushima Kitakata" instead. Both ramen had the same medium-thick curly noodles and a light soy sauce-based soup. The Clam Dashi version had a slightly stronger flavor, possibly from clams, with a deep umami taste. Although both were similar to the famous Kitakata ramen from Fukushima, this one was a special creation by the renowned owner of Menko Sanshu, Mr. Yamamoto. The delicate yet flavorful broth was truly delicious. The service was exceptional, with Mr. Yamamoto himself serving customers with great care. Despite the small size of the restaurant and being run by a single person, the wait was worth it for a delightful bowl of ramen.

I went to Mikusama's villa. It's my third time. My previous posts disappeared. It was real, so... It opened, then after a year, it was renovated into Buta Katakuchi Ramen, and then when it reopened, it went back to the original style. Well, it has changed quite a bit... Kaki and Fukushima. The photo is of kaki (clams). The clams are shijimi. The shells are a little yellow. Yellow shijimi are said to be delicious, like the ones at Shota no Sushi... or maybe it's just a feeling... The ramen is undeniably delicious. It's my favorite hand-kneaded curly noodles. There are lots of shijimi in it. It's gentle. The Sansho chirimen gohan (rice with dried young sardines and Japanese pepper) is also delicious. I like whole eggs, so I wish they had used whole eggs... It's amazing that they are still holding on to the 800 yen price. Also, despite being a one-man operation, you don't have to wait too long. This is amazing. This is my second visit since the opening, and the menu has changed drastically! I had the Shoyu Ramen with dried fish from Sakata, Yamagata. The light and gentle dried fish soup goes well with the medium-thick hand-kneaded flat noodles. The texture of the noodles from Ittan is also nice and smooth! The chashu pork melts in your mouth and is tender. I finished it all in one go! It was a refined and elegant flavor. I enjoyed it very much. Thank you for the meal.
