I remembered having shabu-shabu served with soba dipping sauce before, and I thought it would be something like that, but it exceeded my expectations. In a word, it was a warm shabu-shabu salad. They've creatively incorporated plenty of vegetables, making it easy to enjoy lots of greens. This time, I opted for the standard course at 6,000 yen plus an all-you-can-drink option, but ordering a la carte would also be a good choice. However, the 2,000 yen drink package includes options like Shirahōnokawa and special lemonade, which makes it quite a bargain.
As soon as I entered the restaurant, I was enveloped in the aroma of the broth, and my excitement grew. At the entrance, I could see the shaved bonito flakes, which are an astonishing one-tenth the usual thickness and incredibly fluffy. They generously sprinkle this on various dishes, making it a real luxury. The thin bonito flakes quickly change in color and aroma when exposed to air, making it a unique delicacy you can only taste here.
The first dish in the course is chawanmushi (savory egg custard), and once I sprinkle the bonito flakes on it, the flavor completely transforms. I, of course, end up adding a lot. The assortment of obanzai (small, traditional Japanese side dishes) is also delicious, and then the shabu-shabu begins to arrive, served in a broth made from bonito, mackerel, sardines, kelp, and shiitake mushrooms. They let you taste the broth first before adding an extravagant amount of bonito flakes into it. You can really notice the difference in flavor before and after adding the flakes.
The vegetables are finely sliced, making them easy to enjoy with the meat. When I add the meat to the broth, it's refreshing yet infused with the deep flavor of the broth, making it feel like I could keep eating forever. It was a nice touch to be able to take home some bonito flakes as a souvenir for my egg-over-rice breakfast the next morning. I thought of several friends living abroad; they would surely love this place if I brought them here! Since each dish was delicious, I might enjoy more of the food along with drinks while finishing off with shabu-shabu.
