先ずは麺
On April 14, 2023, at 6:50 on a Friday, I responded to a call and received the "Spicy Miso Ramen" from the pick-up counter and served it at my seat. However, I didn't feel much spiciness in it. Even during my assignment in Sendai, I had tried a similar spicy miso dish, but it was gentle. The spiciness I imagined was achieved by adding a large amount of my own spice blend to the dish. Hantaya's value lies in its 24-hour operation, which accounts for about 80% of its appeal. The establishment of such an outstanding business that caters to those who want to eat is remarkable. And presenting suitable menus is reminiscent of the spirit of the Warring States period. While the noodles are not the low-hydration type I prefer, the ability to eat ramen within a time frame that seems impossible in terms of time and space is not a concern. It is important that the noodles have evolved from being like rubber bands in childhood to something more substantial. The notion that ramen is all about the soup is inevitable in the history of Japanese ramen. Even within this history, people have forgotten that noodles are an essential part of ramen and have made the soup the main focus. We humans are creatures easily influenced by our surroundings, and in the current state of affairs, we are at the pinnacle of living beings, with our mistaken understanding due to our intelligence. It is inconceivable to think of eating anything other than noodles when faced with them. The brain processes external information that has been inserted, leading to self-satisfaction based on factors such as appearance and popularity. If someone were to try to eat soup spaghetti, would they drink the broth first because it is soup spaghetti? I have only eaten soup spaghetti a few times, and naturally, a ladle is not provided. Most likely, in Japan, only ramen is subject to such performances, appearances, and trends like "I know how to eat ramen" for Instagram. It is a sad characteristic of the Japanese people who believe in misinformation. Ultimately, how one eats food is a matter of personal choice. The Japanese have a history of rejecting uncouth eating habits and manners, but there are those who simply do not care and uphold their individual freedom. This is the freedom of human beings, with a certain level of intelligence using tools such as chopsticks to eat. In modern-day Japan, it is challenging to adhere strictly to the practice of drinking the broth first, a teaching that may have been established through rigorous Zen training for Zen Buddhist monks. I never quite felt comfortable with the idea of drinking the broth first when learning martial arts. I rebelled, saying, "I eat rice first, and I can't tolerate such coercion." Do young people who drink the soup first when eating ramen do so because it has always been that way for them? It is understandable for the younger generation, as they have grown up seeing others do it, making it the norm. Since I can remember, I have always eaten noodles first, and that has not changed. Therefore, drinking the soup first with a ladle when eating ramen seems like a pretentious act to me.
